if you loved my Ferrero Rocher inspired protein bars, then you’re going to LOVE these Ferrero Rocher Stuffed Dates.
they’re what gooey, nutty, chocolatey – these stuffed dates are what dreams are made of.
these gems also only take about an hour to make – so they’re suuuper simple and require minimal but wholesome ingredients.
all you need are medjool dates, cocoa powder, vanilla extract, runny almond butter, almond milk, and roasted hazelnuts!
once you blend all of this together, you’ll place big spoonfuls of the dough onto flattened medjool dates.
then, freeze them, dunk them into some melted chocolate, freeze them again to harden the chocolate topping, et voila!
i love making chocolate bar inspired desserts and these are one of my favorites. i’m also a huge Ferrero Rocher gal, so maybe biasness is at play haha!
also, this year i have been on a huge date kick. i think it started when i began eating like 6 a day to prepare for labor and i just haven’t been able to stop lol.

Ferrero Rocher Stuffed DatesCourse: Snacks
10 large medjool dates pitted and flattened
- Ferrero Rocher
1 cup medjool dates
1/3 cup cocoa powder
1 tsp vanilla extract
1/3 cup runny almond butter
1/4 cup almond milk
1/2 cup roasted hazelnuts
- chocolate coating
1 cup chocolate chips
1 tbsp coconut oil
- add the Ferrero Rocher ingredients to a food processor and blend until a dough forms.
- add a large spoonful to the tops of flattened out medjool dates.
- place in the freezer for 20 minutes and then melt the chocolate chips with coconut oil.
- dunk the date bites into the chocolate and freeze for 30 minutes.
- store i the fridge in an airtight container and enjoy!
