Ingredients
Method
- Line a small plate or tray with parchment paper.
- Slice each Medjool date lengthwise without cutting all the way through and remove the pit.
- Spoon about 2 tbsp dairy-free yogurt into each date.
- Nestle 2 banana slices into the yogurt.
- Add 2 teaspoons peanut butter on top of the banana.
- Place the stuffed dates in the freezer for 1–2 hours, or until firm.
- Melt the chocolate chips with the coconut oil in 20-second intervals in the microwave, stirring between each, until smooth.
- Dip or spoon the melted chocolate over each frozen stuffed date.
- Return to the freezer for 10–15 minutes until the chocolate hardens.
- Enjoy straight from the freezer or let sit at room temperature for 3–5 minutes before eating for a softer center.
