Healthy Banana Date Chocolate Bites

Ingredients
  

  • 8 large Medjool dates pitted
  • 16 slices ripe banana about 1 medium banana
  • 1 cup thick dairy-free yogurt of choice
  • 16 tsp creamy or crunchy peanut butter 2 tsp per date
  • ¾ cup coconut sugar-sweetened chocolate chips
  • 1 tsp coconut oil

Method
 

  1. Line a small plate or tray with parchment paper.
  2. Slice each Medjool date lengthwise without cutting all the way through and remove the pit.
  3. Spoon about 2 tbsp dairy-free yogurt into each date.
  4. Nestle 2 banana slices into the yogurt.
  5. Add 2 teaspoons peanut butter on top of the banana.
  6. Place the stuffed dates in the freezer for 1–2 hours, or until firm.
  7. Melt the chocolate chips with the coconut oil in 20-second intervals in the microwave, stirring between each, until smooth.
  8. Dip or spoon the melted chocolate over each frozen stuffed date.
  9. Return to the freezer for 10–15 minutes until the chocolate hardens.
  10. Enjoy straight from the freezer or let sit at room temperature for 3–5 minutes before eating for a softer center.
