1 and 1/2 cups gluten free oat flour
1 tsp baking powder
1 tsp baking soda
2 mashed overripe medium size bananas
1/3 cup creamy almond butter
1 tbsp vanilla extract
2 tbsp maple syrup
1 tbsp apple cider vinegar
3/4 cup blueberries
1/2 cup blackberries (can cut in half if you want)
- 1/2 cup vegan cream cheese
- preheat the oven to 350 degrees.
- mix the cookie base ingredients together until a thick dough forms, then fold in the berries and evenly combine.
- next, add spoonfuls of the vegan cream cheese to the batter and very gently mix through. you want to still be able to see some chunks of cream cheese. you can top with more cream cheese and berries!
- use a large ice cream scoop to evenly distribute the cookies bake at 350 degrees for 23 minutes. let the cookies cool completely so they firm up.
- store in the fridge or freezer and enjoy!
