Easy Vegan Blueberry Coffee Cake

monday calls for some Easy Vegan Blueberry Coffee Cake, right?! what a perfect recipe to start the week with and it will definitely get you though it! the cake portion is lighter and fluffy, while the blueberries add a delicious somewhat tart component. then, there’s the sweet cinnamon and coconut sugar crumble on top that makes this recipe amazing.

coffee cakes are so fun and lots of times, people ask me, where is the coffee in the recipe?

there isn’t coffee in coffee cakes actually, but you have this with your coffee :).

as always, i kept the recipe super simple for you, which i’m always striving to do!

the base and the crumble topping are both made with the same flour-oat flour!

oat flour is fantastic for baking and it’s definitely on the cheap side for better alternatives to all purpose flour!

i buy it at Whole Foods and it costs $3.49! there’s about 4 cups per bag too, so it’s a great deal in my opinion.

as far as the blueberries go, you can use fresh or frozen. i went with frozen because that’s what i had on hand, and i also love the aesthetic of baked frozen blueberries.

they’re such a deeper color than fresh and i just love that, but either works. oh, did i mention they’re cheaper than fresh too?

ok, that cinnamon crumble topping, that uses oat flour as i mentioned, AND we use coconut sugar.

Easy Vegan and Blueberry Coffee Cake bakes in the oven for a total of 37 minutes!

you’re going to need an 8 x 11 baking pan and if you use something different, like an 8 x 8, just make sure you adjust and monitor the baking time.

since the cake will be much thicker, the cake will also have to bake longer.

Easy Vegan Blueberry Coffee Cake will keep really well in the fridge for a few days in an airtight container.

if you want to store it longer, then i would recommend the freezer! just thaw as needed and enjoy it!

Easy Vegan Blueberry Coffee Cake is best served with a hot cup of coffee or tea, and may i recommend a drizzle of nut butter on top!

baking powder

Ingredients

  • cake
  • 2 and 1/2 cups oat flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp vanilla extract

  • 1/3 cup maple syrup

  • 1/3 cup melted coconut oil


  • 1 cup dairy free milk

  • 1 flax egg (1 tbsp flax meal + 3 tbsp water)

  • 1 and 1/4 cup blueberries or however many needed to top cake
  • cinnamon crumble
  • 1/3 cup coconut sugar

  • 1 tbsp cinnamon

  • 1 tsp vanilla extractย 

  • 2/3 cup oat flourย 

  • 1/4 cup + 1 tbsp melted coconut oil

Directions

  • preheat the oven to 350 degrees.
  • mix the cake ingredients until a thick batter forms. then, add to a greased 8 x 11 baking pan.
  • add the blueberries on top and coat as much of the batter as possible.
  • mix the cinnamon crumble ingredients together in a bowl and crumble on top of the blueberries.
  • bake at 350 degrees for 37 minutes and enjoy!
