High Protein Vegan Brookies

High Protein Vegan Brookies are the new higher protein dessert that you need to make!

they are PACKED with protein and made with both protein powder and one whole can of white beans.

you won’t even be able to tell the brookies are made with beans, they’re totally undetectable.

as for protein powder, i used both chocolate and vanilla in this recipe, but you can just use one or the other!

the brownie base has chocolate protein and the cookie dough top calls for vanilla.

the brownie layer is actually baked in the oven while the cookie dough is not baked!

these gems are DENSE and that’s because of the beans and lighter load of flour!

High Protein Vegan Brookies use a combination of oat flour, almond flour and protein powder to comprise the bulk of the brookies.

add in some chocolate chips to the brownie base for extra decadence!

i used some chocolate chips that are made with coconut sugar and have a lower glycemic index.

Ingredients

  • 1 can rinsed and drained white beans (15 ounces)

  • 1/4 cup maple syrup

  • 2 scoops chocolate protein powder (33g per scoop)

  • 1/2 cup gluten free oat flour

  • 1/3 cup runny nut butter

  • 3/4 cup dairy free milk

  • 1 tsp vanilla extract

  • 1/3 cup dairy free chocolate chips

  • cookie dough
  • 2 scoops vanilla protein powder (33g per scoop)

  • 1/2 cup almond flour

  • 1/2 cup gf oat flour

  • 1/4 cup runny nut butter

  • 1/4 cup maple syrup

  • 1/4 cup + 1 tbsp dairy free milk

  • 1 tsp vanilla extract

Directions

  • add all brownie layer ingredients except the chocolate chips to a food processor and blend until a thick dough forms. fold in the chocolate chips.
  • add to a parchment lined bread loaf pan and bake at 350 degrees for 28 minutes.
  • cool down completely to let the brownies set and then mix the cookie dough ingredients.
  • place on top of the brownie layer, cut into squares and enjoy!
