have you ever had Spicy Vegan “Egg” Salad Bagels? probably not, and now is your chance! wow, this is probably one of my favorite recipes to date. you won’t believe how easy Spicy Vegan “Egg” Salad Bagels are to make for lunch. oh, also, it’s PACKED with flavors.
the flavors and textures are both so on point. egg salad is all the rage right now, but us vegans can have some fun too.
my version is protein PACKED by the way, so even if you’re not vegan, you should totally try this recipe. it might convert you!

the base of the spicy “egg” salad is made with chickpeas and tofu, and i used organic for both.
in order to get that grainy texture, i just popped the chickpeas and tofu in the food processor for a few pulses. it doesn’t take much!
then, you can transfer the mixture to a bowl and add alllll of the flavor.

for the sauce, you’re going to need some plain and unsweetened dairy free yogurt, plain hummus, sriracha or Gochujang paste, liquid aminos and more.
not much more though, this recipe is super simple. while you can eat the “egg” salad plain, i do recommend bagels, because bagels make everything better.
also, i added a little bit of avocado for some healthy fats and it is the perfect addition!

since so many people in the upbeetandkaleingit community have been wanting more lunch ideas, this is a must make!
i love that it’s protein packed too! the bagel sandwich is honestly really filling when you pair it with avocado too.
you can store Spicy Vegan “Egg” Salad Bagels in the fridge, just wait to assemble the bagels until the day of.
it truly tastes better the next day even because all of the flavors have time to marinate. this recipe did not last long in our house though.

here’s everything you need to make Spicy Vegan “Egg” Salad Bagels
bagels of your choosing
extra firm tofu
a can of chickpeas
plain dairy free yogurt
plain hummus
sriracha or gochujang paste
liquid aminos
garlic powder
onion powder
avocado
you don’t really even need salt in this recipe because the liquid aminos are pretty salty and so is sriracha or gochujang. also, the hummus has sodium, but you can always taste test!

Spicy Vegan Egg Salad Bagels

Ingredients
- bagels of your choosing and a couple of avocados
- vegan spicy egg salad
14 ounces extra firm tofu
1 can (15 ounces) chickpeas rinsed and drained
1/3 cup plain creamy coconut yogurt
1/4 cup plain hummus
1 tbsp sriracha or gochujang paste
2 tbsp liquid aminos
1 tsp garlic powder (can add more if you like)
1 tsp onion powder
Directions
- add the chickpeas and tofu to a food processor. pulse a few times until a grainy consistency forms.
- add to a large bowl with the other spicy vegan egg salad ingredients and mix well.
- top some bagels with mashed avocado and then the vegan egg salad and enjoy!
