there are ton’s of delicious ways to eat tomatoes and cheese, but i have to say, this is my favorite.
all you just need a block of vegan mozzarella and the brand that i used is miyoko’s! it’s perfectly creamy and melts well!
it doesn’t melt exactly as well as it’s dairy counterpart but it’s cruelty-free and good for you, so I am all about that.
a mixture of cherry tomatoes and kumato tomatoes are such a treat. you can use cherry or grape and leave the kumato tomatoes behind if you can’t find them!
cherry tomatoes can be found at just about every grocery store. ok, here is my replacement suggestion if you can’t find miyoko’s mozzarella or any solid cheese block.
you can take a tub of vegan cream cheese like kite hill brand, place it in the center and let it melt a little bit.
the dish will be a bit more messy but it will still taste fantastic, i promise you that.
oh and let’s not forget about the crispy basil, which takes this recipe to another level. truly shocked that i have not put crispy basil on everything and anything, it’s divine.
it’s really to easy to make crispy with extra virgin olive oil and a little bit of sea salt.

Vegan Mozzarella with Tomatoes and Crispy BasilCourse: 10 Ingredients, Lunch u0026amp; Dinner, SnacksDifficulty: Easy
30 ounces cherry and kumato tomatoes or just cherry
1 (8 ounce) block miyoko’s vegan mozzarella
1 tsp garlic powder
1 tsp onion powder
1/2 tsp sea salt
4 tbsp olive oil
- crispy basil
1 tbsp olive oil
1 handful sliced basil
pinch of sea salt
- add the 4 tbsp of extra virgin olive oil to a pan along with the tomatoes, seasoning and sea salt.
- saute for 5 minutes on medium heat. then, add the block of mozzarella to the center.
- place a lid on top and cook for 10 minutes on medium heat and then it should be done.
- for the crispy basil, add the olive oil and basil to a pan and cook on medium heat for about 4 minutes. stir around until it is crispy.
- add to the tomatoes and mozzarella and serve with with your favorite toasted bread.
