Greek-Style Easy Pasta Salad

happy Wednesday to all of you lovely gems! made ya a greek inspired recipe today: Greek-Style Easy Pasta Salad. it’s not traditional at all, but just a fun twist on some traditional flavors. i noticed a lot of Greek restaurants in America have pepperoncinis, so you know i had to add some to this!

you’re going to use fresh produce in this salad like tomatoes, red onions and bell pepper! feel free to add cucumber too, i just didn’t have any.

also, you can add some avocado pieces, but there is vegan feta in here for that buttery component.

i buy violife and i think it’s sold at most grocery stores, at least at Publix, Whole Foods and sprouts!

ok, growing up eating feta before i went vegan, yes, i can tell it’s not the same. however, it’s crazy close.

personally, i love the taste and think it’s as good as vegan feta can get, but if you know of another brand, please let me know because i’m so keen to try others. 

i have come across some artisan vegan fetas made specifically by a restaurant or cafe i have visited, but have not found any other than violife that’s sold at a grocery store.

you can use any kind of pasta you would like in this recipe by the way. i use orecchiette because it’s so cute and I don’t think i ever used it before haha.

also, i love me some regular old pasta made with semolina.

don’t get me wrong chickpea pasta is amazing and all but sometimes regular just hits the spot.

if you don’t want to use pasta, here are some other foods that would work well!

  • basmati rice
  • any type of pasta
  • quinoa
  • farro
  • bulgur
  • millet

the dressing for Greek-Style Easy Pasta Salad is super simple too! honestly, this couldn’t be a more convenient recipe.

you just need extra virgin olive, rice vinegar, sea salt, pepper, garlic powder and a little bit of dried dill.

that’s pretty standard for Greek salads, the vinegar and olive oil base that is. it really packs a lot of flavor i promise.

Greek-Style Easy Pasta Salad

Ingredients

  • 1 box cooked pasta of your choosing
  • 1 cup kalamata olives (pitted)

  • 2 cups tomatoes cut into pieces

  • 1/2 cup chopped red onion

  • 3/4 cup pepperoncini

  • 1 large bell pepper cut into pieces

  • 3/4 cup crumbled vegan feta

  • dressing
  • 1/4 cup extra virgin olive oil

  • 2 tbsp rice vinegar

  • 1/2 tsp garlic powder

  • 1/2 tbsp dried dill

  • sea salt and pepper to taste

Directions

  • cook the pasta according to package directions
  • whisk the dressing ingredients together in a bowl or just add directly to the pasta, veggies, vegan feta and olives.
  • mix everything together until well combined and enjoy!
