this is not any ordinary pasta salad, it is THE pasta salad you need on your table for dinner tonight. it’s packed with veggies, yummy pasta and the most delicious tahini dressing! Easy Veggie Pasta Salad with Tahini Dressing is the perfect meal for every occasion and makes a great meal prep option.
the dressing….oh the dressing. it’s a tahini cilantro lime dressing that you just may want to drink. this is a truly a refreshing recipe that’s perfect for spring or summer.
i can’t wait to enjoy this on the patio with my hubby this weekend, he requested it again for dinner because the pasta salad is that good.
something so wonderful about salads- you can easily make swaps and so many different options work! if there’s something you don’t like that i used, feel free to use another food.
the reason i used raw carrots, red cabbage, bell pepper, cilantro and roasted chickpeas was solely due to the amazing flavor combination.
the foods compliment the dressing really well and there are a variety of textures.
sometimes i roast my own chickpeas and sometimes i don’t lol. tbh, i didn’t want to go through the trouble this time around, so i used Saffron Roads chickpeas.
i buy mine at Whole Foods and Publix but of course feel free to make your own!
you can always roast rinsed and drained chickpeas with some seasoning and avocado oil at 400 degrees for about 25 minutes. just monitor them to achieve the level of crunch you want.
in terms of pasta, you can use anything and everything. i had a bag from Trader Joe’s sitting in my pantry and it’s their brown rice and quinoa fusilli pasta.
it’s really tasty and holds up well, all around just a great texture.
also, when it comes to the tahini, i recommend using a brand that’s runny, so Trader Joe’s is a great option.
if that’s not possible, no problem, it just makes it easier to mix the dressing by hand but you can always use a food processor.
alright, let’s get back to the dressing because it’s the true star of this dish! here’s everything you need!
- fresh lime juice
- vegetable broth
- liquid aminos
- fresh cilantro
- finely minced garlic
- onion powder
- nutritional yeast
- dijon mustard

Easy Veggie Pasta Salad with Tahini DressingCourse: Lunch & Dinner, Pasta, SaladsDifficulty: Easy
4-7 servings depending on whether this is a main dish or side dish!
1 lb cooked pasta of your choosing
3/4 cup roasted chickpeas- see text for brand used
- veggies and cilantro
1 cup shredded raw carrots
1 cup shredded raw red cabbage
1 large red bell pepper cut into small pieces
handful of freshly chopped cilantro
1/3 cup runny tahini
1/2 cup vegetable broth
juice of 1.5 small limes
1/2 tsp sriracha
1 tbsp liquid aminos
1 tbsp nutritional yeast
1 tsp dijon mustard
1/2 tbsp very finely minced garlic
1/4 tsp onion powder
2 tbsp chopped cilantro
- cook the pasta according to the package directions.
- add the chickpeas, cilantro, veggies and cooked + cool down pasta to a large mixing bowl.
- whisk the dressing in a bowl or add to a food processor and pour over the pasta salad.
- combine well until everything is coated and serve at room temperature. store in the fridge in an airtight container.
