Ingredients
pasta
1 lb cooked pasta of your choosing
Chickpeas
3/4 cup roasted chickpeas- see text for brand used
veggies and cilantro
1 cup shredded raw carrots
1 cup shredded raw red cabbage
1 large red bell pepper cut into small pieces
handful of freshly chopped cilantro
dressing
1/3 cup runny tahini
1/2 cup vegetable broth
juice of 1.5 small limes
1/2 tsp sriracha
1 tbsp liquid aminos
1 tbsp nutritional yeast
1 tsp dijon mustard
1/2 tbsp very finely minced garlic
1/4 tsp onion powder
2 tbsp chopped cilantro
Instructions
cook the pasta according to the package directions.
add the chickpeas, cilantro, veggies and cooked + cool down pasta to a large mixing bowl.
whisk the dressing in a bowl or add to a food processor and pour over the pasta salad.
combine well until everything is coated and serve at room temperature. store in the fridge in an airtight container.
