pesto pesto this stuff is the bestoooo. for real though, who knew such real, simple ingredients could create such amazing flavors. this pesto is super fragrant and the way it made my kitchen smell was the best. in fact, if i could turn this pesto into a candle, i would lol.
you don’t need many ingredients for this recipe. just one avocado, fresh basil, arugula, lemon juice, olive oil, veggie stock, garlic, onion powder, garlic powder and sea salt. no pine nuts in this particular recipe and only because i didn’t have any on hand. if you do, definitely go for it! also, some nutritional yeast would be amazing too.
pesto is a staple in my vegan diet lol. it’s an easy sauce that can be put together in no time. you just add all of the sauce ingredients to a food processor and blend away. pestos are versatile sauces too, you can add so many delicious ingredients.
basil is a must but the arugula can be replaced. i’ve also made pestos with spinach and kale. definitely prefer spinach because the taste isn’t super strong when it’s raw like kale. if you steam the kale beforehand, that should for sure take out some of the strong taste but spinach is always a safe bet!
arugula is great because it has sort of a “peppery” and slightly spicy taste, which is fantastic for salads and sandwiches too.

- arugula or spinach
- lemon juice
- extra virgin olive oil
- vegetable stock
- garlic powder
- onion powder
- sea salt

Healthy Vegan Arugula PestoDifficulty: Easy
- 1 lb pasta cooked according to package directions
2 handfuls arugula
1 handful fresh basil
2 medium garlic cloves
1 tbsp lemon juice
2 tbsp extra virgin olive oil
1/2 cup vegetable stock
1 small avocado
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp sea salt or sea salt to taste
- blend all pesto ingredients in a food processor until a smooth sauce forms.
- mix in with the rinsed and drained pasta.
- serve room temp or warm and enjoy!
