What Makes This Hamburger Helper Healthier?

Traditional boxed Hamburger Helper is convenient, but making it from scratch allows you to control the ingredients, seasonings, protein, and amount of pasta.

This version uses 93% lean ground beef, which provides protein, iron, zinc, and vitamin B12. Rather than relying on a boxed seasoning mix, we’re using garlic powder, onion powder, smoked paprika, Italian seasoning, and liquid aminos to create a delicious savory flavor.

We’re also using real sharp cheddar and mozzarella cheese, along with milk, to create a creamy sauce without needing heavy cream.

And one of my favorite things about this recipe? The beef-to-pasta ratio! With 2 pounds of ground beef and just 2½ cups of dry macaroni, this meal is especially hearty and protein-forward.

Ingredients You’ll Need

Lean ground beef: I recommend 93/7 ground beef for a great balance of flavor and protein. Ground turkey would also work if you prefer a lighter alternative.

Marinara sauce: Using jarred marinara is one of my favorite shortcuts! It adds tomato flavor, herbs, and seasonings without having to chop or sauté vegetables.

Beef broth: Helps cook the pasta directly in the pot while adding savory flavor. I recommend low-sodium broth.

Milk: Creates a creamy sauce and balances the acidity of the marinara. I used 2% milk.

Sharp cheddar cheese: Gives the dish its classic cheesy flavor. Sharp cheddar is especially delicious because a little goes a long way in terms of flavor.

Mozzarella cheese: Adds that irresistible melty, creamy texture.

Liquid aminos: Provides a rich, savory umami flavor that complements the beef beautifully.

Garlic powder and onion powder: All the flavor of garlic and onions without any chopping!

Smoked paprika: Adds subtle smokiness and depth.

Italian seasoning: Complements the marinara and adds an extra layer of flavor.

Dijon mustard: Optional, but a small amount enhances the savory cheeseburger-inspired flavor without making the dish taste like mustard.

Easy Substitutions and Variations

Make it gluten-free: Use your favorite gluten-free pasta and ensure your marinara, broth, and liquid aminos are certified gluten-free if needed. Gluten-free pasta may require a different cooking time or additional liquid.

Use ground turkey: Swap the beef for 2 pounds of lean ground turkey. The flavor will be slightly lighter, but the recipe will still be delicious.

Add vegetables: Stir in a few handfuls of baby spinach toward the end of cooking, or add finely chopped zucchini or mushrooms while browning the beef.

Make it extra creamy: Add a splash of milk when stirring in the cheese for an even silkier sauce.

Change the cheese: Sharp cheddar and mozzarella are my favorite combination, but Monterey Jack or Colby Jack would also work beautifully.

Use chickpea pasta: This is another option for adding protein and fiber. Just be mindful that chickpea pasta can cook differently and may become soft more quickly.

How to Store and Reheat

This recipe is wonderful for leftovers and meal prep!

Refrigerator: Store cooled leftovers in an airtight container in the refrigerator for up to 3–4 days.

Freezer: You can freeze individual portions for up to 2 months, although the pasta may soften slightly after thawing.

Reheating: Warm leftovers in a skillet over medium-low heat or in the microwave. Add a splash of milk or broth to loosen the sauce and restore that creamy texture.

Frequently Asked Questions

Can I make this Hamburger Helper gluten-free?

Absolutely! Simply use gluten-free pasta and verify that the remaining ingredients are gluten-free. Keep an eye on the pasta while cooking because gluten-free varieties can have different cooking times and liquid requirements.

Do I need to boil the pasta separately?

Nope! That’s one of the best things about this recipe. The uncooked pasta goes directly into the skillet with the beef, marinara, milk, and broth. It cooks right in the flavorful sauce, making cleanup so much easier.

Can I use a different kind of ground meat?

Yes! Lean ground turkey or chicken can be substituted for the beef. Just keep in mind that the flavor and nutritional values will change slightly.

Can I make this without heavy cream?

Yes, and that’s exactly how this recipe is written! The combination of 2% milk, sharp cheddar, mozzarella, and the starch released from the pasta creates a creamy sauce without heavy cream.

Is this recipe good for meal prep?

Definitely! This recipe makes 6 generous servings or 8 smaller portions, making it great for family dinners and leftovers throughout the week. Just add a splash of milk when reheating.

My Healthy One-Pot Hamburger Helper is loaded with lean ground beef, tender pasta, a rich and creamy tomato sauce, and plenty of melty cheddar and mozzarella cheese. It's comforting, cheesy, packed with protein, and made with simple, wholesome ingredients.
Servings: 6

Ingredients

  • 2 lbs lean ground beef 93/7 recommended
  • – 2½ cups dry organic penne pasta regular wheat pasta; gluten-free can be substituted
  • – 1¾ cups marinara sauce
  • – 2¼ cups low-sodium beef broth
  • – 1½ cups 2% milk
  • – ¾ cup shredded sharp cheddar cheese
  • – ½ cup shredded mozzarella cheese
  • – 1 tbsp liquid aminos
  • – 1½ tsp garlic powder
  • – 1½ tsp onion powder
  • – 1 tsp smoked paprika
  • – ½ tsp Italian seasoning
  • – ½ tsp Dijon mustard optional
  • – Sea salt and black pepper to taste
  • – Fresh parsley for garnish optional

Method

  1. Brown the beef: Heat a large, deep skillet or Dutch oven over medium heat. Add the ground beef and cook for approximately 7–9 minutes, breaking it into small crumbles until fully browned and cooked through. Drain any excess grease if needed.
  2. Season the beef: Stir in the liquid aminos, garlic powder, onion powder, smoked paprika, Italian seasoning, Dijon mustard (if using), and black pepper. Mix well until the beef is evenly coated in the seasonings.
  3. Add the pasta and liquids: Pour in the marinara sauce, beef broth, and milk. Stir everything together, then add the uncooked penne pasta. Make sure the pasta is mostly submerged in the liquid.
  4. Simmer: Bring the mixture to a gentle simmer, then reduce the heat to medium-low. Cover and cook for approximately 14–18 minutes, stirring every few minutes to prevent sticking, until the penne is tender. If the sauce becomes too thick before the pasta finishes cooking, add a splash of broth or milk. If there’s too much liquid toward the end, remove the lid and simmer uncovered for a few minutes.
  5. Make it cheesy: Once the pasta is tender, remove the pot from the heat. Stir in the sharp cheddar and mozzarella until completely melted and incorporated into the creamy tomato sauce. If needed, add a small splash of milk to achieve your desired consistency.
  6. Let it thicken: Allow the Hamburger Helper to rest uncovered for 3–5 minutes. The sauce will continue to thicken as it cools.
  7. Serve: Taste and adjust the salt and pepper as needed. Garnish with fresh parsley and serve warm. Enjoy!
