Smashed Potato Kale Caesar Salad

happy monday and happy savory recipe day!! yes, today, i have my first savory recipe in awhile and it’s a good one. Smashed Potato Kale Caesar Salad is honestly what dreams are made of and more. with garlicky smashed potatoes topped with a creamy and dreamy kale caesar, there’s nothing not to love

over here, we are HUGE lovers of all things potatoes but also caesar salad. Alex LOVES raw kale while i can’t say i’m as big of a fan.

they key to a good kale salad though is to massage the kale, like it’s a must!

i already have a couple of different recipes for smashed potatoes on my blog and also kale caesar.

this recipe is a little different from the latter two! it’s super basic when when it comes to the potatoes but the kale caesar dressing is so fun.

fun, garlicky, tangy, salty goodness, ya know, all of the good things.

mmm if you think the potatoes look good, wait until you taste them! i used a garlic infused olive oil by the way, which i highly recommend if possible.

if not, no worries, just add extra garlic powder to each one! the potatoes are already sprinkled with a little bit of garlic and onion powder.

along with the salt and pepper, they’re super basic but we want that so the natural flavors of the roasted potato come though.

the salad is strong, so we don’t want the flavors to clash!

ok, so kale massaging, huh?

yes! massaging your kale makes SUCH a difference in the texture in my opinion, and for the better too. i’ll explain in the post!

in terms of the type of kale i prefer, i have to say lacinato! i made sure to remove the majority of the tough stems/ribs, which actually wasn’t that time consuming.

trust me, it will make a difference because no one wants to chew a tough stem that doesn’t taste great.

ok, so back to massaging the kale in case you’re not sure how! personally, i prefer massaging kale with avocado oil. it’s mild in taste and does a good job. 

you don’t need a lot at all! maybe start with 1/2 tbsp and add another 1/2 tbsp after 30-45 seconds or so!

the key is to break down the kale so it’s more tender. you squeeze the kale with your hands and make sure that you’re getting all of the pieces. do this for about three minutes!

once the kale is noticeably more tender, you should be good to go.

here’s everything you’re going to need!

  • lacinato kale
  • roasted chickpeas
  • golden potatoes
  • garlic infused olive oil (or regular)
  • vegan mayo or coconut yogurt (rec cocojune or culina)
  • fresh lemon juice
  • dijon mustard
  • vegetable broth
  • miso paste
  • dried dill
  • minced garlic 
  • onion powder
  • capers

Smashed Potato Kale Caesar Salad

Ingredients

  • 3 lbs small gold potatoes

  • 2 tbsp garlic infused extra virgin olive oil

  • 1/2 tbsp garlic powder

  • 1/2 tbsp onion powder

  • sea salt and pepper to taste

  • salad
  • 10 ounces chopped lacinato kale with ribs removed

  • 1/3 cup vegan mayo or coconut yogurt

  • 1 tbsp fresh lemon juice

  • 1 tbsp fresh minced garlic

  • 1 tsp miso paste

  • 1/2 tbsp dried dill

  • 3 tbsp capers

  • 1 tsp dijon mustard

  • 1/4- 1/3 cup vegetable broth

  • 1/2 tsp onion powder

  • sea salt and pepper to taste

  • 1 cup roasted chickpeas (used store-bought and brand is Saffron Roads)

Directions

  • preheat the oven to 400 degrees.
  • boil the potatoes for 16-18 minutes until they are tender and easily pierced with a fork.
  • drain the potatoes and toss them with olive oil, garlic powder, onion powder and sea salt.
  • place on a parchment lined baking tray and use the bottom of a glass or mug to flatten the potatoes.
  • bake at 400 degrees for 30-35 minutes depending on how crispy you want them. let then them cool down a bit before adding the salad.
  • whisk the kale caesar dressing ingredients together and then mix well with the kale and chickpeas.
  • place atop the potatoes and enjoy!
  • store in the fridge in an airtight container!

  1. I made this recipe and it’s soooo good!!! Loved the smashed potatoes and the dressing too!! Amazing and seems like a healthier vegan twist on a Caesar with TONS of flavor!!
