Vegan Pumpkin Chocolate Chip Cookie Skillet

happy friday eve my friends! i got festive in the kitchen with a twist on a chocolate chip cookie skillet! this gem is pumpkin spice and everything nice. have you tried pumpkin spice with chocolate? it’s honestly an amazing combo! two foods that were meant for each other in my opinion.

Vegan Pumpkin Chocolate Chip Cookie Skillet is so gooey and fabulous when it comes to taste and texture.

the recipe took me a couple of times to perfect. the first time around, i think i had too much pumpkin spice and not enough nut butter.

now, though, now the skillet is ready to make its official debut in your kitchen.

the cookie skillet is perfect for two people, but i wouldn’t blame you at all if you didn’t share. it’s pretty addicting tbh.

the cast iron skillet i used is 6 inches and it’s perfect for two servings.

if you have a larger skillet or want to feed more people, just double or triple the recipe but you will have to adjust the baking time a bit!

as per like 99% of my recipes, this too is easy as can be to put together.

the ingredient list is short and the ingredients are real. while this is made with better for you ingredients, it does feel super indulgent.

for the chocolate chips, i used sugar free ones, lakanto, which are honestly my absolute favorite. they taste seriously amazing!!

you can use whatever you like though. we love enjoy life but didn’t have any left in the pantry. haha, oops.

Ingredients

  • 1/2 cup pumpkin puree

  • 1/3 cup runny almond butter

  • 1 tsp vanilla extract

  • 1/4 cup coconut sugar

  • 1 tsp vanilla extract

  • 1/4 tsp pumpkin spice

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/4 cup oat flour

  • 1/4 cup almond flour

  • 1/3 cup chocolate chips

Directions

  • preheat the oven to 350 degrees.
  • mix the wet ingredients first and then add in the dry ones.
  • fold in the chocolate chips and add to a greased 6 inch cast iron skillet.
  • bake at 350 degrees for 21-22 minutes. best eaten the day of but you can store the cookie skillet in an airtight container in the fridge.
