Vegan Peanut Butter Protein Fudge Bars

it’s a new week and that means new recipes, including these delicious Vegan Peanut Butter Protein Fudge Bars! they’re oh so fudgy and decadent yet the ingredients are once again, REAL. that’s my favorite, to make healthier for you desserts that still taste really rich.

these gems are heavy on the peanut butter, in fact, it’s the main star of the recipe.

on top of using peanut butter as the base, i also added some chopped organic peanuts to the top of the bars, which is totally optional.

the chocolate drizzle is very important, so that we get some candy bar vibes going!

Vegan Peanut Butter Protein Fudge Bars are supposed to be stored in the freezer and we LOVE a good freezer treat, right!?

all you have to do is let the bars thaw a little bit so they’re not rock hard, it’s just a divine treat.

as per the title, there is protein in the Fudge bars. i recommend using vanilla protein and any will work.

however, it’s important to note the grams. i used two scoops that were 31g each, so 62 g total.

this will help you measure out how much protein you need to use. as far as the brand, i used garden of life but just about any will work!

peanut butter

maple syrup

vanilla protein powder

coconut oil

chocolate chips

peanuts for topping

yes, that is truly all you need to make these indulgent bars, it won’t get any more simple, or delicious.

if you’re just not a fan of peanut butter, you can replace it with another nut butter or even seed butter.

if you’re looking for a seed butter, sunbutter is delicious and you could add sunflower seeds to the top of the bars for decor.

almond butter would be another great option and then you can add almonds to the top!

Vegan Peanut Butter Protein Fudge Bars

can cut bars into smaller squares for bites!

Ingredients

  • protein fudge bars
  • 1 cup runny peanut butter

  • 1/3 cup + 2 tbsp melted coconut oil

  • 1/4 cup maple syrup

  • 2 scoops vanilla protein powder (62g total, 31g per scoop)

  • chocolate drizzle
  • 1/3 cup chocolate chips

  • 1 tbsp coconut oil

Directions

  • mix the protein fudge bar ingredients until smooth and well-combined.
  • add to a parchment lined bread loaf pan and evenly spread out.
  • you can add chopped peanuts or nuts to the top if desired.
  • place in the freezer for 2 hours.
  • remove, melt the chocolate chips and coconut oil together and then drizzle on the bars.
  • place back in the freezer for 20 minutes and enjoy!! store in the freezer in an airtight container and thaw a little before eating!
