Vegan Peanut Butter and Chocolate Chip Marshmallow Fudge

hey hey hey! happy monday my friends! sorry that it took me awhile to get this recipe up today but rest assured, there is PLENTY of time to make Vegan Peanut Butter and Chocolate Chip Marshmallow Fudge this week. it’s honestly a must try, at least once.

let’s be real though, you’re not going to try it just once, nobody will, it’s that flippin’ good.

oooooh it’s fudgy too, like realllllly fudgy. honestly incredible!

the addition of chocolate chips and marshmallows just elevates the fudge to a new level of good that i did not know existed.

so these are freezer friendly BUT, i do recommend omitting the marshmallows if you are storing them in the freezer.

don’t worry, the freezer fudge will still be divine as just peanut butter chocolate chip, and you can thaw the fudge when you are ready to serve it!

the fridge is where this is best stored and it’s also best to eat Vegan Peanut Butter and Chocolate Chip Marshmallow Fudge within a week.

not quite sure it will even last that long though, it’s truly addicting!!

the base is SO easy to put together by the way, you simply need a few ingredients that you probably already have.

from peanut butter to vegan butter, maple syrup, vanilla extract and almond flour, that’s all you need for the base.

if you’re adding the marshmallows and choose to store the fudge in the fridge but want it to be a little more firm, you can always pop it in the freezer for ten min.

idk though, i think it tastes best when it’s reeeeally fudgy, but either way it’s phenomenal.

Vegan Peanut Butter and Chocolate Chip Marshmallow Fudge

Ingredients

  • 1 cup very creamy peanut butter

  • 4 ounces melted vegan butter (half of one stick)

  • 1/4 cup maple syrup

  • 1 tsp vanilla extract

  • 1 cup almond flour

  • add ins
  • 1/3 or 1/2 cup mini chocolate chips

  • 3/4 cup vegan marshmallows

Directions

  • mix the fudge base ingredients in a bowl until a thick batter consistency forms.
  • then, fold in the chocolate chips and marshmallows.
  • add to a parchment lined bread loaf pan and place in the freezer for 2 hours.
  • remove the fudge, let it thaw a little until it’s easy to cut through into squares. store in the fridge in an airtight container up to a week.
  • IF you are going to store the fudge in the freezer, i do recommend omitting the marshmallows.
