truly, they make the world a better place :). who wouldn’t want cookie dough stuffed with peanut butter and then dipped in chocolate.

while Cookie Dough Protein Peanut Butter Cups look amazing, they taste even better if you can believe it!

the base is made in a food processor with ingredients like peanut butter, protein powder, medjool dates and more.

then, once the dough is well-mixed, the chocolate chips can be folded in.

you’re going to need some parchment paper muffin cups to make Cookie Dough Protein Peanut Butter Cups.

the first layer is the cookie dough, which is followed by a peanut butter filling.

then, the peanut butter cups are topped with another cookie dough layer and you can dip them in chocolate.

that is completely optional of course, they’re plenty delicious as is, but i am all for adding more chocolate!

runny peanut butter (used crazy richard’s)

medjool dates

dairy free milk

vanilla extract

dairy free chocolate chips

maple syrup

for protein powder i used vanilla and the brand Truvani! there’s 29g in each scoop and i used three total!

Cookie Dough Protein Peanut Butter Cups

Ingredients

  • cookie dough
  • 9 large medjool dates

  • 2 scoops vanilla protein powder (29g per scoop)

  • 1/2 cup gluten free oat flour

  • 1/2 cup runny peanut butter

  • 1/4 cup + 2 tbsp dairy free milk (add more if your peanut butter isn’t runny enough)

  • 1 tsp vanilla extract

  • 1/2 cup chocolate chips

  • filling
  • 1/2 cup runny peanut butter

  • 1 scoop vanilla protein powder (29g per scoop)

  • 1 tbsp coconut oil

  • 2 tbsp maple syrup

  • melted chocolate for coating

Directions

  • add all cookie dough ingredients but the chocolate chips to the food processor.
  • blend until a thick dough forms and fold in the chocolate chips.
  • add a base layer to parchment paper muffin cups. then, add a spoonful of the filling and flatten.
  • freeze for one hour, top with another layer of cookie dough and dunk in melted chocolate.
  • freeze for 10 minutes and enjoy! store in the fridge or freezer in an airtight container.
