yes, a giant vegan cookie that’s positively jam packed with gooey marshmallows and melty chocolate chips is here. it’s made for two but you don’t have to share. oh, the ingredient list couldn’t be more simple and there’s a good chance you have everything on hand, except maybe marshmallows.
decadence is the first word that comes to mind and sticks. this cookie defines an indulgent treat but it’s totally worth it in every way.
the base is made with oat flour and almond flour and it has a hint of peanut butter because that’s the nut butter i chose.
personally, i think peanut butter, chocolate chips, and marshmallows are the holy grail of the ultimate cookie combo but you don’t have to use them!
you could just make this a giant chocolate chip cookie for example. also, if you don’t want a peanut butter taste, use any runny nut or seed butter.
almond butter is pretty mild and would be a great option :).
oooooh and guess what, you don’t even have to make this into a cookie, because the cookie dough is ridiculous.
after all of the spoonfuls i took out of the bowl, i am pretty shocked that i was able to make such a giant cookie in the end.
however, if you saw the reel i made, which i can link below, you know that the baked cookie texture is on another level.
it’s so amazing guys, like i can’t even. the outside is harder and the inside is fudgy and dense but stays perfectly in tact.
the most common question when i make anything s’mores is what kind of marshmallows?
i use dandies, which are vegan and DO NOT disappear from melting, which seems to be an issue with some other brands.
their mini marshmallows are perfect for this recipe but you can totally use another brand if you want to.
here’s everything you’re going to need!
- oat flour
- almond flour
- coconut sugar
- runny peanut butter
- dairy free milk
- chocolate chips

you can store this cookie in the fridge in an airtight container and warm it up BUT i 100000% recommend eating it right after you bake it!
there’s no way you will have any leftovers to store though haha because YES, it is indeed, that good.

Giant Vegan S’mores Chocolate Chip CookieCourse: Cookies, DessertsDifficulty: Easy
1/2 cup oat flour (used gluten free to keep gf)
1/2 cup almond flour
1/8 cup coconut sugar
1/4 cup runny peanut butter
6 tbsp dairy free milk
1/2 tsp baking powder
1 tsp vanilla extract
1/3 cup vegan marshmallows
1/4-1/3 cup dairy free chocolate chips
- preheat the oven to 350 degrees.
- add the dry ingredients to a large bowl and then mix in the wet ones.
- then fold in the chocolate chips and marshmallows and form the dough into a giant cookie.
- bake at 350 degrees for 16-18 minutes and enjoy!!
