hey hey hey! it’s Friday eve and that means the weekend is so close. this weekend, you should totally make The Best Nourishing Vegan Potato Salad! it’s super flavorful and made with the most minimal and wholesome ingredients.
between the delicious dressing, perfectly baked potatoes and greens onions, the merriment of flavors is out of this world.
the main ingredient of the dressing is dairy free yogurt.
you need a plain and unsweetened yogurt and for this, i used the brand forager.
i used two different types of potatoes here, but you can of course just use one! here, i used golden potatoes and nibble potatoes!
it’s what whole foods had and they were calling my name.
you could also use red potatoes or purple potatoes, those are some of my favorites.
as you can se here, there are purple potatoes in the nibble blend.
the ingredients in the dressing are really simple and delicious.
i used dairy free yogurt, extra virgin olive oil, sriracha, onion powder, garlic and lots of it, plus sea salt and pepper.
it’s so cool that the flavors are super simple and yet they pack so much flavor!
by the way, The Best Nourishing Vegan Potato Salad is even better the next day and i eat it cold out of the fridge.
the potatoes have had a lot of time to marinate and take on the flavors, it’s just totally drool worthy.

The Best Nourishing Vegan Potato SaladCourse: Lunch & Dinner, Side DishesDifficulty: Easy
24 ounces golden potatoes cut in half
16 ounces nibble potatoes (or more gold)
2 tbsp avocado oil
1/2 cup dairy free yogurt
1 tsp sriracha
1/2 tsp onion powder
1 and 1/2 tbsp minced garlic
3 tbsp extra virgin olive oil
1 tbsp everything but the bagel seasoning
- 1/3 cup chopped green onions
- preheat oven to 400 degrees.
- toss the potatoes with avocado oil and bake for 35 minutes.
- whisk the dressing ingredients together and pour over the warm potatoes.
- mix in the green onions and enjoy!
