Vegan S’mores Chocolate Chip Cookie Cups, try saying that ten times in a row lol. the name is kind of long but the ingredient list is pretty dang short and the flavor is off the charts. think fudgy and chewy chocolate chip cookies topped with a layer of melted chocolate and then gooey marshmallows on top.

i have zero regrets because wow, they are truly fantastic.
if you’re a fan of s’mores, this is such a fun twist on a classic and yes, the marshmallows are vegan!
the brand is dandies and that’s usually my go to although Trader Joe’s surprisingly has vegan marshmallows too!
beyond those two though, i haven’t had too much luck finding other vegan marshmallows, so lmk if you’ve tried another brand!
always looking to try new ones but for now, either of these works perfectly!
the chocolate chip cookie layer is probably my favorite. it tastes like a truly indulgent chocolate chip cookie and it’s made with oat + almond flour.
there’s some maple syrup and a secret ingredient that i’ve been adding to desserts lately- apple sauce.
you won’t taste the apple sauce at all and it makes the texture legitimately PERFECT. so soft, slightly fudgy but the cookie remains in tact and holds up well.
i just of sort of have a s’mores obsession as you can perhaps tell from my recipes. there’s everything from s’mores cookies to s’mores rolls.

while peanut butter is not in the title, it is a large component of this recipe. i use half a cup actually!
make sure you use a reeeeally creamy almost runny peanut butter.
personally, i think peanut butter, chocolate chips, and marshmallows are the holy grail of the ultimate dessert combo but you don’t have to use peanut butter.
another nut butter or seed butter will work just as well!

- almond flour

Vegan S’mores Chocolate Chip Cookie CupsCourse: Cookies, DessertsDifficulty: Easy
1 cup almond flour
1 cup oat flour
1/2 cup creamy/runny peanut butter
1/2 cup unsweetened plain applesauce
1/3 cup maple syrup
1 tsp vanilla extract
1/3 cup chocolate chips
more chocolate chips for topping
1/2 bag of large marshmallows for topping
- preheat the oven to 350 degrees. next, mix the cookie layer ingredients in a bowl until a thick dough forms. fold in the chocolate chips.
- place about a few tbsp worth of dough in a parchment paper muffin cup and press down slightly to flatten.
- then, add a layer of chocolate chips to the top.
- lastly, cut large marshmallows in half and you will need 3 pieces to cover the top layer of the s’mores cups.
- bake for 23 minutes, cool down a bit and then enjoy!
