you read that right, Vegan Brookie S’mores Cookies…and they taste even better than they sound. just look at those pictures, incredible!! they’re a take on my brookie cookie cake but with a marshmallow upgrade because it’s summertime and marshmallows are always the move.
epic desserts bring me so much happiness and these Vegan Brookie S’mores Cookies top the list with three layers of goodness.
the first layer is the brownie portion, then the cookie and lastly, tasty marshmallows on top. when you cut into the cookies, it looks like heaven.

here’s another option if you don’t want to bake the cookie portion because i’ve tried the cookies this way too!
just add the marshmallows to the top of the brookie layer and bake.
then instead of baking the cookie layer, you just add a generous amount of cookie dough to the top once the cookies cool a bit.
then you have brookie s’mores cookie DOUGH cookies, yum!
the dough is amazing uncooked actually and that’s how i originally intended it to be!

also, instead of cookies, you could make this recipe brownie style, or even a cake! my recipe is very versatile in terms of how you shape it!
brownie style would be a fabulous and you could start with the brownie layer (same order), then add on the cookie layer and top with marshmallows.
so for vegan marshmallows, i definitely recommend Dandieโs brand or even Trader Joeโs brand, which is vegan surprisingly.

to make everything even, i used a smaller ice cream scoop to measure out the brownie and cookie layers!
the brownie layer is not too sticky and you can easily roll it into a ball and flatten into a cookie.
then, you can take an ice cream scoop full of the cookie batter and place it right on top of the brownie layer.
the cookie dough is a little sticky, so with slightly wet hands, press it down into the brownie layer!
there’s going to be two different batters, so let’s go over what’s in each one!
brownie layer
- almond flour
- baking powder
- cocoa powder
- runny peanut butter (rec Trader Joe’s or Whole Foods brand)
- unsweetened dairy free milk
- maple syrup
- vanilla extract
cookie layer
- oat flour
- almond flour

- mini chocolate chips

Vegan Brookie S’mores Cookies

- brownie layer
1 and 1/2 cups almond flour
1 tsp baking powder
1/3 cup cocoa powder
1/3 cup runny peanut butter
1/3 cup unsweetened dairy free milk
1/3 cup maple syrup
1/2 tbsp vanilla extract
- cookie layer
1 cup oat flour
1/4 cup almond flour
1/3 cup + 2 tbsp unsweetened dairy free milk
4 tbsp maple syrup
3 tbsp runny peanut butter
1 tsp vanilla extract
1/4 cup mini chocolate chips (or however much you want)
- 5-6 mini vegan marshmallows per cookie
Directions
- preheat the oven to 350 degrees. in two separate large mixing bowls, make both the brookie and cookie dough separately.
- use an ice cream scoop to evenly distribute the cookies. the brownie layer is not too sticky and you can easily roll it into a ball and flatten into a cookie.
- then, take an ice cream scoop full of the cookie dough, place on top of the brownie layer and with slightly wet hands, flatten into it.
- top with 5-6 mini marshmallows.
- bake at 350 degrees for 18 minutes and let the cookies cool completely so they set and take shape.
- store in the fridge or freezer in an airtight container and thaw before eating. enjoy!
