The Best Vegan Blueberry Bread is well, simply the best and better than the rest.
i fully stand by this statement and i think you will too after you make this.
you absolutely do not need eggs or dairy to achieve a light, fluffy and out of this world texture.
The Best Vegan Blueberry Bread is perfectly sweet and with every bite, you get a mouth full of blueberries.

one of the keys to achieving the fluffy texture is instead of using fresh or frozen blueberries, we’re going to use freeze dried here.
this will ensure the dough is fully cooked and there’s no mushiness or fudgy-like texture.
while i adore a fudgy dessert bread, this is a fun switch-up and is more like something you will find in a bakery.
The Best Vegan Blueberry Bread has a base of organic all purpose flour and i have not made or tested it with anything else.
as always, you’re welcome to try other flours, but please don’t expect the same result :).

as for using fresh or frozen berries, i have not tested those in this exact recipe makeup, so i highly recommend using freeze dried.
you can find freeze dried blueberries at most grocery stores and online too!
The Best Vegan Blueberry Bread is sweetened with coconut sugar, so it is refined sugar free if that’s something you’re looking for.

hereโs everything you need to make The Best Vegan Blueberry Bread
organic all purpose flour
baking powder
baking soda
coconut sugar
vinegar (rice vinegar or apple cider vinegar)
dairy free yogurt (used trader joe’s cashew)
avocado oil
dairy free milk
vanilla extract
sea salt
freeze dried blueberries
you can make a quick glaze to top The Best Vegan Blueberry Bread if you would like!
i made a very simple one with powdered sugar and dairy free milk, but it’s not necessary because the bread is SO good by itself.
if you are looking for an extra little something though, a glaze and frosting would work perfectly.
there is truly nothing better than a warm slice of The Best Vegan Blueberry Bread with plant based butter.
better than a bakery and this loaf is beyond easy to make as it only requires one bowl.
