you absolutely do not need eggs or dairy to achieve a light, fluffy and out of this world texture.

The Best Vegan Blueberry Bread is perfectly sweet and with every bite, you get a mouth full of blueberries.

one of the keys to achieving the fluffy texture is instead of using fresh or frozen blueberries, we’re going to use freeze dried here.

this will ensure the dough is fully cooked and there’s no mushiness or fudgy-like texture.

while i adore a fudgy dessert bread, this is a fun switch-up and is more like something you will find in a bakery.

The Best Vegan Blueberry Bread has a base of organic all purpose flour and i have not made or tested it with anything else.

as for using fresh or frozen berries, i have not tested those in this exact recipe makeup, so i highly recommend using freeze dried.

i made a very simple one with powdered sugar and dairy free milk, but it’s not necessary because the bread is SO good by itself.

The Best Vegan Blueberry Bread

Ingredients

  • 2 cups organic all purpose unbleached flour

  • 1/2 tbsp baking powder

  • 1/2 tbsp baking soda

  • 1 cup coconut sugar

  • 1 tbsp vinegar (rice or apple cider vinegar)

  • 2/3 cup unsweetened dairy free yogurt

  • 2 tbsp avocado oil

  • 1 cup dairy free milk

  • 1/2 tbsp vanilla extract

  • 1.2 ounces freeze dried blueberries

Directions

  • preheat the oven to 350 degrees.
  • add the wet ingredients to a mixing bowl first and then mix in the dry ones.
  • combine until a thick and smooth batter forms. then, fold in the blueberries.
  • add the batter to a well greased bread loaf pan (10″ x 5″ x 3″ high) and bake at 350 degrees for 45 minutes.
  • let the bread cool down a bit, cut into slices and enjoy!
