The Best Vegan Chocolate Protein Truffles

i cannot recall a time that i did not have some sort of no bake treat on hand in the fridge or freezer. shockingly enough, i was running quite short this week! it was time for something epic, like The Best Chocolate Protein Truffles!

don’t second guess anything about this recipe…run to the kitchen! you probably have most things on hand and if you don’t, definitely save this recipe for later.

for the protein, i used Silver Fern Rich Chocolate, but you can use whatever you have on hand. i added two scoops to the dough, so 62g total- just compare the nutrition facts on yours to theirs.

if you are looking to meal prep a healthier dessert or semi sweet snack for the week, this should be it!

if you do like things on the sweeter side, then i recommend either adding 1 tbsp maple syrup to the dough OR you can add a couple to the chocolate coating.

if you add a lot to the dough, whether that’s maple syrup or coconut sugar, you could end up changing the texture.

just taste test it as is and have maple syrup on hand to add a little bit if need be!

i did add some sea salt to the top, more for garnishing because like i said, they aren’t very sweet. if you want to omit it altogether, go for it.

it just looks pretty lol. also, hemp hearts would be an excellent topping choice! you could also do use crushed almonds or any kind of nuts, the options are endless.

storing the truffles

when it comes to storing the truffles, it depends on how fast you’re going to eat them. i recommend keeping 4 or 5 in the fridge and then keeping the rest in the freezer in an airtight container.

just thaw the protein truffle a bit before you eat one. they’re actually so so good fresh out of the fridge in my opinion, but my husband likes to warm his up in the microwave.

aaaah freshly dipped in the chocolate coating and they are GLOWING, like quite literally. the chocolate coating is pretty necessary in my opinion just for the extra sweetness.

all it’s made with are chocolate chips and coconut oil, that’s it! pretty simple and you could also use avocado oil or even vegan butter.

i simply temper the sauce in the microwave 30 seconds at a time and it usually only takes one minute total!

The Best Vegan Chocolate Protein Truffles

Ingredients

  • 1.5 cups almond flour

  • 1/4 cup flax meal (used golden flax meal)

  • 1/4 cup cocoa powder

  • 2 scoops chocolate protein (see text for protein brand)

  • 1 tsp vanilla extract

  • 1/3 cup + 2 tbsp unsweetened almond milk (or any dairy free)

  • 1/4 cup runny almond butter (important it’s runny)

  • 1/3 cup chocolate chips melted with 1/3 cup unsweetened almond milk

  • chocolate coating
  • 1/2 cup chocolate chips

  • 3 tbsp coconut oil

Directions

  • melt the chocolate chips and almond milk together for the protein bite dough (1 min in the microwave) and stir well.
  • add the dry ingredients into a bowl and then mix in the wet ones. form into small/medium size bites.
  • for the chocolate coating, melt the coconut oil and chocolate chips until a smooth sauce forms. dunk the protein truffles in the sauce with two forks and place on a parchment lined baking tray.
  • place in the fridge for at least an hour or until the chocolate coating completely hardens.
  • store in the fridge or freezer in an airtight container.
