2 scoops chocolate protein (see text for protein brand)
1 tsp vanilla extract
1/3 cup + 2 tbsp unsweetened almond milk (or any dairy free)
1/4 cup runny almond butter (important it's runny)
1/3 cup chocolate chips melted with 1/3 cup unsweetened almond milk
chocolate coating
1/2 cup chocolate chips
3 tbsp coconut oil
Instructions
melt the chocolate chips and almond milk together for the protein bite dough (1 min in the microwave) and stir well.
add the dry ingredients into a bowl and then mix in the wet ones. form into small/medium size bites.
for the chocolate coating, melt the coconut oil and chocolate chips until a smooth sauce forms. dunk the protein truffles in the sauce with two forks and place on a parchment lined baking tray.
place in the fridge for at least an hour or until the chocolate coating completely hardens.
store in the fridge or freezer in an airtight container.
