regular baked cookies are great and all BUT, have you ever had No Bake Yogurt Protein Cookies?!
these are the new summer staple in our house and we couldn’t be more excited to open the freezer.
all you’re going to need is some dairy free yogurt that’s high in protein, heavy coconut cream, dairy free milk, freeze dried fruit, vanilla protein powder and melted chocolate.
yes, that’s it! No Bake Yogurt Protein Cookies are as easy as it gets when it comes to using minimal ingredients and following a simple prep process.
in terms of yogurt, i really love siggi’s plant based yogurt.
there’s 11g of protein per serving, which is pretty amazing for a dairy free yogurt.
No Bake Yogurt Protein Cookies calls for one cup of yogurt and then 1/2 heavy coconut cream.
the cookies are super creamy and so amazing if you let them thaw a little bit when they’re fresh out of the freezer.
while i used freeze dried raspberries, you can use ANY freeze dried fruit you want.
you CAN also use fresh fruit, i just prefer freeze dried in this recipe because it doesn’t make the yogurt as watery, but it won’t make too much of a difference.
freeze dried blueberries or strawberries would be my next choices if i did not use raspberries.
also, you could omit the fruit and keep these plain and creamy vanilla cookies that are topped with melted chocolate!

No Bake Yogurt Protein CookiesCourse: Snacks, Sweet
yields 8-10 cookies
1 cup dairy free yogurt (see text for brand)
1 and 1/2 scoops vanilla protein powder (used garden of life)
1/2 cup heavy coconut cream (thick part only)
1/3 cup dairy free milk
1 bag freeze dried raspberries (bag was .8 ounces)
- melted chocolate
1 and 1/4 cup low sugar chocolate chips (used trader joe’s)
2 tbsp coconut oil
- add all cookie ingredients to a mixing bowl and stir until well combined.
- use a 1/4 cup measuring up to evenly distribute the mixture into cookies on a parchment lined baking tray.
- freeze for 2 hours.
- melt the chocolate chips with coconut oil and let the mixture cool down.
- dunk or drizzle the cookies, freeze another hour and enjoy!
- store in the freezer in an airtight container and thaw a little bit before eating.
