these brussels sprouts are lightly coated and baked in avocado oil, garlic powder, and whatever herb seasoning you like the most.

using these ingredients gives what seems like a plain cruciferous vegetable a lot more flavor.

i steam the brussels sprouts for about 10 minutes before i bake them in the oven.

this gives the brussels sprouts the perfect amount of softness on the inside while giving them a really beautifully baked and crunchier outside.

it’s really important to pre steam the brussels sprouts, so don’t forget that step!

the peanut sauce is so incredibly creamy and perfect to serve as a dipping sauce!

Ingredients

  • brussels sprouts
  • 2 bags brussels sprouts (32 ounces)

  • 3 tbsp avocado oil

  • 1 tsp garlic powder

  • 1 tsp herb seasoning of choice

  • sea salt and pepper to taste

  • peanut sauce
  • 1/2 cup runny peanut butter

  • 3 tbsp teriyaki sauce

  • 1 tsp sriracha

  • 1/2 cup vegetable broth (can add more to thin it out)

  • 1 tsp garlic powder

Directions

  • preheat the oven to 425 degrees.
  • add the brussels sprouts to a large pan and add a couple of inches of water.
  • steam them for 10 minutes until tender but not fully cooked.
  • toss with the avocado oil and the seasonings, then, use a mug or cup to smash flat.
  • bake at 425 degrees for 25 minutes.
  • whisk the peanut sauce ingredients together, serve with the brussels sprouts as a dipping sauce, and enjoy!
