Vegan Tzatziki Smashed Potatoes

garlic smashed potatoes are true bliss and once you add homemade vegan tzatziki, it just can’t get any better. made these gems for my fam while i was back home without the tzatziki sauce and knew they were missing a lil something. well, the sauce did the trick! garlicky, creamy goodness with fresh dill was the topping these already delicious garlic smashed potatoes needed.

double the garlic, double the fun right!? if you’re just not much of a garlic fan, you could leave the garlic out of the smashed mashed potato part and just add it to the tzatziki.

this recipe is very simple and minimal. the ingredients are basic and so is the cooking + baking process.

you will have to boil the potatoes whole first. i picked up some small red potatoes at Trader Joe’s and boiled them in water for 17 minutes. this part is super important! then, you add the potatoes to a bowl, mix with the remaining ingredients, place them on a parchment lined baking tray and lightly smash with a glass.

trust me, it’s really easy and a fail proof method. then, they go into the oven for 25 minutes at 425 degrees to bake to crispy perfection.

if you are looking for a different kind of potato recipe, i recommend my Roasted Potatoes and Garlic Sauce. kind of the same concept as this recipe but you cut the potatoes into wedges and the sauce is a bit lighter.

instead of vegan tzatziki, i made a basil and pine nut vinaigrette, which complimented the flavors perfectly.

for Vegan Tzatziki Smashed Potatoes, you’re going to need the following:

  • 2.5 lbs small red potatoes (mine were on the larger end of small)

  • extra virgin olive oil

  • garlic

  • onion powder

  • green onions

  • vegan cream cheese

  • coconut cream

  • fresh dill

  • lemon juice

  • sea salt

easy enough, right!? if you want to use another kind of potato, go for it but make sure it’s comparable in size. if you use smaller ones than i did, just monitor the boiling and baking times.

oh my goodness, i’m borderline drooling even though i JUST ate haha. the tzatziki is honestly the best dip/sauce in the world. of course, mine isn’t traditional but for being vegan and healthy, it’s as good as can be.

Ingredients

  • 2.5 lbs small red potatoes

  • 3 tbsp extra virgin olive oil

  • 1/4 cup sliced green onion

  • 1 tbsp very finely minced garlic

  • 1 tsp onion powder

  • 1/2 tsp sea salt

  • tzatziki
  • 1/3 cup vegan cream cheese

  • 1/3 cup coconut cream (used trader joes brand)

  • 1 tsp very finely minced garlic

  • juice 1/2 small lemon

  • 2 tbsp fresh chopped dill

  • sea salt and pepper to taste

Directions

  • boil the potatoes in water for 17 minutes or 15 if yours are smaller.
  • add to a large mixing bowl with the rest of the potato ingredients and mix well.
  • place on a parchment lined baking tray and use the bottom of a glass to flatten the potatoes.
  • bake at 425 degrees for 25-27 minutes.
  • add the tzatziki ingredients to a bowl and mix well. place atop the potatoes or have on the size and enjoy! if the potatoes are warm, they will melt the tzatziki a bit because of the coconut cream, so you may want to serve on the side!
