first came tzatziki smashed potatoes…then pizza….and now, RANCH! oh it’s hard to pick a favorite but ok, Vegan Garlic Ranch Smashed Potatoes are my favorite ones. they’re just absolutely blissful snacks or sides to any meal.
whooooo makes a weekend cooking and/or baking list?! i get lots of messages and comments from people saying they’re going to make my food over the weekend!
that’s such a great idea because you can relax and enjoy the process a lot more than during the work or school week.
even as a week night side dish or appetizer though, Vegan Garlic Ranch Smashed Potatoes are wonderful options because they’re easy to put together.

even though these smashed potatoes are easy to put together, they’re not the quickest to make. somewhere in between i would say.
you boil the potatoes about 15-17 until they’re soft and easily pierced with a fork. on top of boiling the potatoes, they’re baked in the oven of course to crispy perfection.
this version of my smashed potatoes are baked at 400 degrees for 35 minutes, which achieves the perfect texture in my opinion.


so the potatoes i used are from Trader Joe’s. i bought a 3 lb bag of organic small gold potatoes. you could use red too, which i used last time.
this is enough for 6 people as a side dish! you can always make more or less too! actually, i had about 1/4 cup ranch dressing leftover and guess what, i made a salad.
yes, it’s perfect for anything and everything. you could even use it as a pasta sauce and add a little bit of buffalo sauce…..oh my GOSH, that’s heaven right there.

what all do you need to make Vegan Garlic Ranch Smashed Potatoes?!
for the potato portion:
- small potatoes
- avocado oil or extra virgin olive oil
- garlic powder
- sea salt
for the ranch sauce:
- vegan mayo (used primal kitchen vegan mayo)
- apple cider vinegar
- chili powder
- onion powder
- minced garlic
- dill weed (dried)
- sea salt to taste

Vegan Garlic Ranch Smashed Potatoes

- Potatoes
3 lbs small gold potatoes
2 tbsp avocado oil
1/2 tbsp garlic powder
sea salt to taste
- Ranch Dressing
3/4 cup vegan mayo (see text for brand)
1/2 tbsp dill weed (dried)
1 tsp very finely minced garlic (used pre minced and jarred from Trader Joe’s)
1/2 tsp onion powder
1/4 tsp chili powder
1/2 tbsp apple cider vinegar
sea salt to taste
Directions
- preheat the oven to 400 degrees.
- boil the potatoes for 15-17 minutes until they are tender and easily pierced with a fork.
- drain the potatoes and toss them with avocado oil, garlic powder and sea salt.
- place on a parchment lined baking tray and use the bottom of a glass or mug to flatten the potatoes.
- bake at 400 degrees for 35 minutes.
- whisk the ranch dressing ingredients together and then pour over the potatoes or use as a dipping sauce.
- store in the fridge in an airtight container and enjoy!
