Ingredients
Potatoes
3 lbs small gold potatoes
2 tbsp avocado oil
1/2 tbsp garlic powder
sea salt to taste
Ranch Dressing
3/4 cup vegan mayo (see text for brand)
1/2 tbsp dill weed (dried)
1 tsp very finely minced garlic (used pre minced and jarred from Trader Joe's)
1/2 tsp onion powder
1/4 tsp chili powder
1/2 tbsp apple cider vinegar
sea salt to taste
Instructions
preheat the oven to 400 degrees.
boil the potatoes for 15-17 minutes until they are tender and easily pierced with a fork.
drain the potatoes and toss them with avocado oil, garlic powder and sea salt.
place on a parchment lined baking tray and use the bottom of a glass or mug to flatten the potatoes.
bake at 400 degrees for 35 minutes.
whisk the ranch dressing ingredients together and then pour over the potatoes or use as a dipping sauce.
store in the fridge in an airtight container and enjoy!
