one of my favorite meals of ALL time is this…Vegan Sautéed Veggies and Tofu with Peanut Sauce. oh man, it’s just so hearty, healthy and flavorful. you will never ever find me or my husband getting sick of this meal.

my husband received a text message of this gloriousness and immediately got even more excited to come home. while he can’t wait to see me, the man lives for my cooking hahah.
Vegan Sautéed Veggies and Tofu with Peanut Sauce is a meal that he loves to come home to because he is HUNGRY, and this hits the spot.
aaaah where do i start?! the veggies and tofu, the peanut sauce, the rice?! you can use any kind of rice you want, or you could even use pasta or another whole grain. cauliflower rice is always an option if you’re looking something lower in carbs.

not even going to lie, my favorite part of the dish is the peanut sauce. it’s simple to make, but the flavors are INCREDIBLE. you’re going to need peanut butter, ginger juice, liquid aminos, dijon mustard, vegetable stock, garlic powder and onion powder.
now, if you can’t find ginger juice, which i bought at Whole Foods, freshly grated ginger is just fine.
i would start with a small amount since it’s strong and do a taste test. then, add more a little bit at a time to achieve the flavor you want.


when it comes to veggies, the world is your (vegan) oyster. you can choose anything you want but i firmly believe there is nothing better than carrots, broccoli, onions and peanut sauce.
talk about a combination made in heaven. ooo but there are totally other food that would work! you could even add some greens like kale or spinach.
not a fan of carrots, how about sweet potato!? just make sure they’re cut into small pieces so that everything cooks evenly.

truly, this is a phenomenal recipe when it comes to meal prep. just make a lot of rice! i made enough so that i had 3 cups of cooked organic brown short grain rice.
the veggies and tofu are enough for 4 people i would say, but i guess that totally depends on serving sizes. there’s plenty for 4 hearty and decent size meals.

Vegan Sautéed Veggies and Tofu with Peanut Sauce

3 cups cooked rice of your choosing (cook according to package directions)
- veggies and tofu mixture
3 tbsp avocado oil
1/2 cup chopped red onion
1.5 cups sliced carrots
2 cups broccoli florets
14 ounces extra firm tofu cut into small cubes
1 and 3/4 cup vegetable broth
- peanut sauce
2 tbsp liquid aminos
1/4 cup vegetable broth
1 tbsp ginger juice
1 tsp dijon mustard
1/3 cup creamy peanut butter
1/2 tsp garlic powder
1/2 tsp onion powder
Directions
- cook the rice according to package directions.
- sauté the veggies and tofu in avocado oil for 6 minutes on medium-high heat and stir fairly often.
- then, add the 1 and 3/4 cup veggie broth and cook an additional 12 minutes or until the liquid is absorbed.
- mix the peanut sauce ingredients together in a bowl and pour over the veggies and tofu.
- serve with rice and enjoy!
