there’s a myriad of flavors and textures that mesh perfectly together.
here’s another plus, no cooking is involved! you just have to chop some greens and veggies and whisk the salad dressing together.
no roasting or anything like that! you can totally make swaps if there are ingredients i used that you’re not a fan of.
instead of kale, you could always opt for spinach or another green. romaine lettuce would be great too!
when it comes to kale in my salads, i do prefer tuscan kale, which is also called lacinato i believe.
as you can probably tell, i love lots of nuts and seeds in my baked goods and meals.

a good vegan cheese is necessary in my opinion, and i went with a vegan ricotta from kite hill.

Vegan Healthy Green Salad with Peanut DressingCourse: Lunch u0026amp; Dinner, SaladsDifficulty: Easy
1 bunch lacinato kale sliced thinly
1 large cucumber cut into quarters
1 and 1/2 cups edamame
1/3 medium size red onion chopped finely
2 large avocados cut into small pieces
1/3 cup sliced green onion (can omit if too much onion for you)
1/2 cup macadamia nuts
1/2 cup walnuts
1/3 cup pumpkin seeds
8 ounces vegan ricotta
1/3 cup runny peanut butter
1/2 tbsp minced garlic
1/2 tsp onion powder
1 tbsp miso paste
1 tbsp dijon mustard
1/2 cup veggie broth
- add all salad ingredients to a large salad bowl.
- whisk the dressing ingredients well and then pour on top of the salad.
- mix very well until everything is coated. serve cold or room temp and enjoy!
- store in the fridge in an airtight container.
