Vegan and Gluten-Free Creamy Pasta with Homemade Parm

on a sunday we have to have a pasta dinner, so i made you one of my all time favorites, Vegan and Gluten-Free Creamy Pasta with Homemade Parm! it’s a specialty in our house and a dish that i have been making for years. while the process to make the pasta dish is super easy, the best part is the out of this world flavor.

you can have dinner made in under 15 minutes with my simple and delicious Vegan and Gluten-Free Creamy Pasta with Homemade Parm.

the sauce is made with a base of cashews and the parm is made with a base of walnuts.

to achieve that cheesy flavor, a few key ingredients come into play here.

first, you’re going to need nutritional yeast, that’s where the majority of the cheesy flavor comes from.

also, cashews and walnuts take on a super cheesy flavor along with dijon mustard.

to make Vegan and Gluten-Free Creamy Pasta with Homemade Parm extra extraaaa creamy, you’re going to add some coconut cream, just 1/4 cup.

this sauce is high in healthy fats and it’s perfectly balanced with the carby pasta.

the recipe will serve about 5 people if you make a box and a half like i did.

you can easily cook two boxes of pasta though, there’s plenty of sauce.

if you want to add a protein of sorts, like tempeh or tofu, go for it! personally, we were just looking for a simple pasta dish without any other additions.

as far as pasta goes, i went with banza, which is a chickpea based pasta. you can use whatever you like though!

brown rice pasta is also a favorite of ours, and it holds up well. lentil is another good one but you can totally go with delicious semolina pasta.

Vegan and Gluten-Free Creamy Pasta with Homemade Parm

Ingredients

  • creamy sauce
  • 1 cup raw cashews boiled in hot water for 4-5 minutes and then rinsed/drained

  • 1/4 cup nutritional yeast

  • 1/2 tbsp minced garlic

  • 1/2 tbsp dijon mustard

  • 1/4 cup coconut cream

  • juice of 1/2 lemon

  • 1/2 cup vegetable stock

  • sea salt to taste

  • homemade parm
  • 1 cup raw walnuts

  • 1/4 cup nutritional yeast

  • 1/2 tbsp minced garlic

  • sea salt and pepper to taste

  • 1 and 1/2 boxes cooked pasta

Directions

  • boil the cashews for 4-5 minutes and then rinse and drain them. mix the creamy sauce ingredients together in a blender until a smooth consistency forms.
  • add to cooked pasta of your choosing.
  • add the homemade parm ingredients to a food processor and blend until a super grainy consistency forms.
  • mix in the homemade parm with the pasta and top with more. enjoy!
  • store in the fridge in an airtight container.
