Orange Miso Pasta and Greens

it’s no secret that pasta makes me happy as it does for most people. a good sauce is everything and Orange Miso Pasta and Greens brings everything to the table. from the orange miso sauce to the perfect mix of leafy kale and zucchini, dinner can be ready in no time.

al called me and said he was going to leave the hospital soon, around 6pm and that he was v hungry. i had such a busy day that i had forgotten to make him dinner, which is rare.

what the heck can i put together really quickly?! well, pasta for sure, but what else? there were some oranges sitting on the counter that i bought from trader joes and i opened the fridge to miso…aha.

typically, i’m not a huge fan of orange juice in sauces but this just works. plus, the navel oranges were too refreshing and perfectly ripe to pass up on! when you add peanut butter and miso, the combo is total bliss.

the other sauce ingredients really elevates the flavor. i got sesame oil from trader joes and then used Eden Shake- Furikake, which i found at Whole Foods and now i can’t go without it.

if you can’t get ahold of any, try another seasoning or just plain sesame seeds, whatever works for you.

if you don’t want to use peanut butter, another nut butter like cashew or almond works, or you could use a seed butter.

tahini or sunflower seed butter would be wonderful too. honestly, you can’t go wrong with any of the aforementioned, but one of them is needed for flavor and texture.

when it comes to the zucchini and kale, i wanted to keep the dish green but you could totally use any veggies or greens you want.

just keep in mind that different veggies have different cooking times.

this is such a gorgeous dish to serve for any occasion, but it’s extra perfect for nights you want to feel fancy but not spend a lot of time or effort on dinner.

you could totally add some protein too! we happened to be all out or perhaps i would have added tofu! have you tried The Best Crispy Tofu?! it would go so well with this.

oh and also, pertaining to the orange juice, you will need a fresh/sweet component but if you’re not a fan of orange, may i suggest some pineapple juice?Β i think that would definitely be the best sub.

use any kind of pasta you would like! i bought some yellow lentil pasta from trader joes and i love the way it stays together nicely.

with some healthier pasta options, the noodles end up falling apart or become super mushy, so this is a great option!

there are so many good pasta brands out there and i could spend an eternity just trying to test them all out haha.

Orange Miso Pasta and Greens

Ingredients

  • 1 lb cooked pasta of choice

  • 1 large zucchini cut into small pieces

  • 3-4 handfuls tuscan kale

  • sauce
  • 1 tbsp sesame oil

  • 3 tbsp runny peanut butter

  • 1.5 tbsp miso paste

  • juice of 1 large orange

  • 2 tbsp water

  • 1.5 tbsp sesame seasoning-eden foods furikake

Directions

  • to steam the kale and zucchini, bring 1 inch of water to boil in a large saucepan fitted with a steamer basket. add the zucchini and kale. cover and steam until very tender, about 7 minutes or until tender.
  • whisk the sauce ingredients together and then pour over the pasta and cooked veggies.
  • store in an airtight container and enjoy!
