Roasted Tofu Kale Salad with Lemon Poppyseed Dressing

oh happy day because Roasted Tofu Kale Salad with Lemon Poppyseed Dressing is here and you can even make it for dinner tonight! with bold and fresh flavors that are beyond delicious, you will want this salad on repeat.

confession: raw kale is not my thing unless it’s prepared right with a yummy dressing.

the key is to massage the kale first to break it down, which makes it taste better and easier to eat/digest.

you can use whatever kind you want, but i went with lacinato kale, which happens to be my favorite for raw salads.

it’s on the tougher side though, so you can always choose a different variety.

there are two stars in this dish in my opinion. first, the roasted tofu and secondly, the dressing.

the tofu is prepared in the most simple of ways yet the flavor runs deep and the texture is on point. no one wants soggy tofu, so baking it to perfection is key.

the dressing is creamy, dreamy and a little zesty from the lemon, ah, it’s just divine. the dressing needs a little sweet component, which comes from balsamic glaze.

the balsamic glaze i used is store-bought, but you can always make your own!

when it comes to the base of the dressing, i went with vegan mayo and used the brand primal kitchen. if you’re just not a fan, use creamy coconut yogurt.

i would recommend culina or cocojune for the coconut yogurt, both are super creamy and the coconut flavor is not overpowering.

there were some gorgeous heirloom tomatoes at my grocery store and I couldn’t resist adding them to the salad

also, red onions are perfect in this dish, both for flavor and a little bit of crunch. honestly, this salad is so versatile that you can add TONS of options.

various veggies, nuts, seeds, chickpeas and more would all work perfectly! anything that works with hints of lemon is going to be fantastic.

Roasted Tofu Kale Salad with Lemon Poppyseed Dressing

Ingredients

  • 2 bunches kale cut into slices (remove the ribs as much as possible)

  • 1/2 cup sliced red onion

  • 2 medium heirloom tomatoes cut into slices

  • 1 tbsp avocado oil

  • tofu
  • 14 ounces extra firm tofu cut into cubes

  • 1 tsp sriracha

  • 2 tbsp liquid aminos

  • 1 tbsp arrowroot flour

  • dressing
  • 1/3 cup vegan mayo or coconut yogurt

  • 1 tbsp liquid aminos

  • 1.5 tbsp balsamic glaze

  • 1/2 tbsp minced garlic

  • 1 tsp onion powder

  • 1/4 cup veggie stock

  • 1 tsp poppyseeds

  • juice of 1/2 small lemon

Directions

  • preheat the oven to 400 degrees.
  • mix the tofu ingredients in a bowl and place on a parchment lined baking tray.
  • bake at 400 degrees for 25 minutes.
  • massage the sliced kale with avocado oil for a few minutes to break it down.
  • whisk the dressing ingredients together, pour over the veggies, kale and tofu and enjoy!
