this will ensure they’re nice and tender and cooked all the way through.
for the noodles, i used udon noodles and they are absolutely delicious. you can use any kind you want but i do recommend udon.
the sauce is outstanding and you’re going to need some runny peanut butter for the base of the sauce.
you can make the sauce a tiny bit spicy thanks to sriracha (depending how much you use), but you always have the option of eliminating it if you want.
the sesame oil adds an amazing depth of flavor, so don’t forget that ingredient!
this recipe will definitely feed the whole fam or you can make it for meal prep.

Vegan Sesame Peanut Noodles with Roasted Brussels SproutsCourse: Lunch u0026amp; Dinner, Main Dishes
- 1 package cooked udon noodles
1 and 1/2 lbs brussels sprouts cut in half
1/3 cup runny peanut butter
2 tbsp sesame oil
1 tbsp avocado oil
1 and 1/2 tbsp liquid aminos
2 tsp sriracha
1 tsp garlic powder
1/2 cup vegetable broth
1 and 1/2 tbsp date syrup
1 tbsp rice wine vinegar
- preheat the oven to 400 degrees.
- steam the brussels sprouts in about an inch of water for 7-8 minutes.
- then, coat with avocado oil and bake at 400 degrees for 28 minutes.
- whisk the sauce ingredients together and then combine the drained noodles, sauce and brussels sprouts while everything is still hot.
- store in the fridge in an airtight container and enjoy!
