Ingredients
1 package cooked udon noodles
1 and 1/2 lbs brussels sprouts cut in half
sauce
1/3 cup runny peanut butter
2 tbsp sesame oil
1 tbsp avocado oil
1 and 1/2 tbsp liquid aminos
2 tsp sriracha
1 tsp garlic powder
1/2 cup vegetable broth
1 and 1/2 tbsp date syrup
1 tbsp rice wine vinegar
Instructions
preheat the oven to 400 degrees.
steam the brussels sprouts in about an inch of water for 7-8 minutes.
then, coat with avocado oil and bake at 400 degrees for 28 minutes.
whisk the sauce ingredients together and then combine the drained noodles, sauce and brussels sprouts while everything is still hot.
store in the fridge in an airtight container and enjoy!
