forget any other biscuit recipe that you have ever had, i promise you, nothing is going to compare to my Vegan and Gluten Free Cheddar Biscuits. they’re made with real ingredients, vegan of course AND gluten-free, so it’s pretty amazing how indulgent they turn out.
you NEED these on your holiday spread, and everyone can enjoy them.
you can’t tell they’re vegan or gf but anyone that is vegan or gf will thank you!
since these biscuits are cheddar, you are going to need vegan cheddar cheese.
any kind is going to work but my absolute favorite is miyoko’s block of vegan cheddar. i grate it myself so that it’s extra fine and oh my gosh, it’s heavenly.
use whatever brand you want though! also, these are versatile and the base is perfect for other add ins!
for example, jalapeño would be amazing if you wanted to give the biscuits a little bit of a spicy kick.
by the way, the biscuits are SO easy to make, don’t be intimidated at all, honestly one of the easiest recipes.
you mix everything in a bowl and then order doesn’t matter as long as you add the vegan cheese last.
combine that well until a nice thick dough forms and add in that cheese! absolute perfection.
to make things even easier, i used a 1/4 cup scoop to mold the dough into biscuits. you will get balls from the scoop that you can slightly flatten.
the biscuits bake in the oven for 25 minutes and boom, your kitchen smells like a 5 star restaurant. i can’t wait to wake up to them on thanksgiving.
as you know, they’re gluten free, so you need gluten free baking flour (1:1). my go to here is Bob’s Red Mill and it comes in a light blue bag.
another main ingredient you’re going to need a lot of is dairy free yogurt.
you’re going to want to use a plain and unsweetened one too, my favorite is Kite Hill unsweetened plain almond milk yogurt.
this is an excellent yogurt for baking, but you can use something else.
the yogurt is the key to light, fluffy and absolutely delicious texture! they’re fluffy yet dense, so y’all know that’s my favorite.
