Vegan and Gluten Free Samoa Inspired Brownie BreadCourse: Cakes, Desserts
- brownie bread layer
2 medium size overripe mashed bananas
1/3 cup runny nut butter
1/4 cup dairy free yogurt
1/2 cup dairy free milk
1 tsp vanilla extract
1/3 cup coconut sugar
1 tsp baking powder
2/3 cup cocoa powder
1/3 cup flax meal
2 tbsp arrowroot powder or corn starch
1 cup almond flour
1/3 cup gluten free measure for measure flour
1/3 cup chocolate chips
- nut butter topping
1/2 cup runny almond butter
3 tbsp coconut flour
3 tbsp maple syrup
1 tsp vanilla extract
- melted chocolate and shredded coconut
- preheat the oven to 350 degrees.
- mix the wet brownie bread ingredients first and then add in the dry ones. combine until a thick batter forms and then fold in the chocolate chips.
- place the batter in a bread loaf pan and bake at 350 degrees for 45 minutes. cool down completely.
- mix the nut butter topping ingredients and place on top of the brownie bread. drizzle with melted chocolate and sprinkle with coconut shreds. cut into pieces and enjoy!
- store in the fridge in an airtight container.
