it’s amazing the bites are not only vegan, but also gluten-free! you need gluten free all purpose flour for the base along with almond flour.
this is a thick dough as the liquid-y components are comprised of a thick and creamy yogurt along with applesauce.
Vegan and Gluten-Free Cinnamon Roll Bites are sweetened with organic light brown sugar and if you’re going to make a sub, i would say coconut sugar should work!
you can also coat the outside with coconut sugar if you’re making the sub for brown sugar.
the key to getting the cinnamon sugar mixture to stick well is to use a neutral spraying oil such as avocado oil.
you can also lightly brush the outsides of the bites with vegan butter, that would be phenomenal!
if you would like to take a shortcut with a glaze like i did, it’s always easy to warm up store bought vegan vanilla frosting.
simple mills vanilla frosting and miss jones melt well if you place the frosting in a microwave safe cup for about 30 seconds.
if you’re looking for a healthier option with less sugar, then i would suggest using some coconut yogurt for dipping the bites!
cocojune and culina are both really yummy but anything you like will work of course.

creamy yogurt (used kite hill greek yogurt)
there’s overlap of course between the light brown sugar and cinnamon in the dough and then the coating!

Vegan and Gluten-Free Cinnamon Roll BitesCourse: Bites, Desserts
1 and 1/2 cups gluten free all purpose flour
1 cup almond flour
1 tsp baking powder
1 tsp baking soda
1/2 cup light brown sugar
1 tbsp cinnamon
1 tsp vanilla extract
1/2 cup applesauce
1/2 cup creamy dairy free yogurt
- oil or vegan butter, light brown sugar + cinnamon for coating
1/4-1/3 cup light brown sugar
1 tsp cinnamon
- store bought frosting or glaze
- preheat the oven to 350 degrees.
- mix the dough ingredients well until a thick mixture forms.
- roll the dough into thick logs about 1 inch thick (maybe a little larger) and cut into bites. then, place on a parchment lined baking tray and bake at 350 degrees for 12 minutes.
- spray with avocado oil or lightly brush with vegan butter and then coat in the cinnamon sugar mixture.
- dip or drizzle with warmed up vegan vanilla frosting and enjoy!
