Nourishing Vegan Autumn Granola is what you are going to want to have on repeat all fall long! i know that we’re not quite there, but if you want to get a head start on some fall goodies, this is a great place to start!
Nourishing Vegan Autumn Granola is really delicious and as per the title, nourishing!
with pumpkin seeds, sunflower seeds and REAL pumpkin puree, you can’t go wrong.

the granola is sweetened with maple syrup and given a delicious seasonal flavor with pumpkin spice and real pumpkin puree.
if you’re anything like me, you’re going to have so many cans of half used pumpkin puree on hand this season, so finding ways not to waste any of it is key.
since Nourishing Vegan Autumn Granola calls for 1/3 of a cup, this is a fantastic way to use up leftover puree.

so, since Nourishing Vegan Autumn Granola calls for using real pumpkin puree and not just pumpkin spice, it’s not going to be super crunchy, particularly in the center.
the outsides will get pretty crispy but the center will be more chewy due to the moisture. i don’t mind this at all because i still love the texture, BUT, it’s an easy fix.
take the center clusters and bake them in the oven a few minutes longer! if they’re broken up into small clusters, a few min should do the trick.
also, Nourishing Vegan Autumn Granola is fabulous as a cereal. i do have a habit of turning my granola into cereal, whether it’s store-bought or homemade, it’s just so good.

gluten free rolled oats
raw sunflower seeds
raw pumpkin seeds
maple syrup
pumpkin puree
sunflower seed butter
pumpkin spice
vanilla extract
great news, Nourishing Vegan Autumn Granola is nut free as long as you don’t use a nut butter! however, you can always swap sunflower seed butter with almond butter or something.

Nourishing Vegan Autumn Granola

2 cups gluten free rolled oats
1/3 cup pumpkin puree
1/3 cup maple syrup
1/3 cup sunflower seed butter
1/2 cup raw pumpkin seeds
1/2 cup raw sunflower seeds
1 tsp pumpkin spice
2 tsp vanilla extract
Directions
- preheat the oven to 350 degrees.
- mix all of the granola ingredients until well-combined and everything is coated.
- transfer to a parchment lined baking tray and bake at 350 degrees for 15 minutes.
- remove the tray, rotate it 180 degrees and bake another 10 minutes.
- remove the granola from the oven and let it cool down completely, at least 30 minutes. then, break the granola into clusters.
- if you would like to bake the chewy center pieces for a little longer, place them in the oven for a few minutes at 350 degrees.
- store in an airtight container and enjoy!
