my Giant Vegan Pizza Pocket is THE ultimate lunch or dinner recipe to split with another person, but you really don’t have to. if you’re craving pizza but want something homemade with better for you ingredients, then make THIS!
my Giant Vegan Pizza Pocket is made with such few ingredients and it’s so easy to put together. it basically looks like a giant pop tart.
hot pockets used to be my jam in my younger years, so this vegan adult version really is nostalgic.

no yeast is required to make a Giant Vegan Pizza Pocket by the way! you simply need all purpose flour and a few other ingredients.
there’s no fuss when it comes to making this recipe!
the ingredients are mixed together into a thick dough, kneaded for a couple of minutes and rolled out into large rectangles about 1/4 inch thick.
from there, you can add marinara, vegan cheese, pepperoni, veggies and really anything else that sounds good!

the key is to not overstuff the Giant Vegan Pizza Pocket because then it can explode in the oven and all of the goodies will leak out.
even i added the sauce a little too close to the edges, so just be mindful to leave at least half an inch.
that way, when the dough is sealed with a fork, the marinara won’t run through.
also, when it comes to vegan cheeses, i used two different kinds! i went with violife grilling cheese, which i cut into half because it’s really thick and also used Trader Joe’s vegan cheddar.
both worked great together and the grilling cheese will melt well as long as you cut the blocks in the package into thinner slices.
you can really use any kind of vegan cheese you want though. i like to go heavy on the cheese when it comes to stuffing my Giant Vegan Pizza Pocket.

it will not get any easier than the ingredients that i have listed! also, the process to put this together is totally fuss free! you really just need a mixing bowl and a rolling pin.

Giant Vegan Pizza Pocket

- dough
2 cups organic all purpose unbleached flour
1 tsp baking powder
1/4 cup + 1.5 tbsp extra virgin olive oil
1/2 cup water
1 tsp sea salt
- jarred marinara (chunky works better than watery)
- vegan cheese
Directions
- pre heat the oven to 375 degrees.
- mix the dough ingredients in a bowl and knead for about 2 minutes.
- split the dough in half and roll out into two rectangles about 1/4 inch thick.
- add marinara to one rectangle and evenly disperse but leave 1/2 inch of room for the edges.
- then, add your vegan cheese of choice on top, seal with the other dough rectangle and seal with a fork.
- clean up any sauce that spills out with a paper towel. bake at 375 degrees for 25 minutes. then, broil one minute. cut into slices and enjoy!
