ohhhh hello Friday eve! you know i love to give you all amazing recipes to make on the weekend, and this one is no exception. Healthy Vegan Sweet Potato Mac and Cheese is the creamy and nourishing goodness you need in your bowl.
with just 8 simple and wholesome ingredients, dinner is served. you can of course use any kind of pasta you want to! in fact you can even pair the cheesy sauce with rice, farro or quinoa, so yum!
the process to make Healthy Vegan Sweet Potato Mac and Cheese could not be any easier. if want a healthy go-to pasta meal, this is it.
as far as the process, you just have to boil the sweet potatoes and then add them to a food processor with the other ingredients.
the cheesy sauce is super thick and creamy as pictured above.
if you don’t want yours quite as thick, you can always add more veggie broth to thin it out.
not a sweet potato fan or just can’t have them? you can totally use regular potatoes. also, butternut squash would be a great option too!
that would probably be wonderful during the fall especially.
the ingredients that really make this sauce taste like heaven are liquid aminos and dijon mustard. both add this depth of flavor that makes the mac and cheese taste extra bold and hearty.
if you can’t get ahold of liquid aminos, coconut aminos would work too. as far as a replacement, soy sauce would probably work well since they taste similar.
also, spices and coconut cream are essential ingredients in my recipe. the combination of all of the flavors i use is what sets my recipe apart from others.
if you really want a healthy sweet potato sauce that is indeed reminiscent of a mac and cheese sauce, this will do it!
however, if you’re looking for something extra indulgent, i would recommend adding vegan cheese to the sauce. add the pasta and sauce to a large pan and then mix in the cheese to warm it through to melt!
that will reeeeeally make this dish feel cheesy, but i did want to keep the base a veggie.

- sweet potatoes
- coconut cream
- liquid aminos
- dijon mustard
- onion powder
- vegetable broth
being a super versatile recipe with flavors that will go with just about everything, you can do as many add ins as you want! between some greens, veggies or protein like tofu, anything will work!

Healthy Vegan Sweet Potato Mac and CheeseCourse: Lunch & Dinner, PastaDifficulty: Easy
serves 3 or 4 depending on serving sizes!
3 cups boiled sweet potatoes cut into cubes
2 tbsp coconut cream
1.5 tbsp liquid aminos
1 tsp dijon mustard
1/2 tbsp minced garlic
1 tsp onion powder
1/2 tsp paprika
3/4 cup vegetable stock
- 1 lb pasta of your choosing
- cook pasta according to package directions. then, boil the sweet potatoes until tender, so about 12 minutes or until easily pierced with a fork.
- drain the sweet potato cubes and add to a food processor with the other sauce ingredients.
- blend until a thick and creamy consistency forms and mix in with the cooked pasta.
- store in the fridge in an airtight container and enjoy!
