if i’m going to have lettuce, it’s going to be dressed up with a good sauce and all of the filling foods like tofu and hearty mushrooms. Easy Tofu and Mushroom Lettuce Wraps are what you need on this meatless monday.
from the amount of time it takes to make Easy Tofu and Mushroom Lettuce Wraps to the the out of this world flavors, you can’t go wrong by having this for dinner.
of course, if you’re looking for something heartier and more substantial than lettuce wraps, you can always have the tofu and mushroom mixture with some tortillas or any wrap you like!

while i have a large vegan following, so many non-vegans reach out saying they love practicing meatless monday or limiting their dairy/meat intake.
if you’re looking to eventually transition to being vegetarian or vegan, meals like this are a fabulous option because they’re not only pretty filling, but not lacking in any flavor.
the key is a fabulous sauce to be honest. the one i made for Vegan Tofu and Mushroom Lettuce Wraps has a base of creamy butter among other tasty ingredients.

the red sauce drizzle on top, that’s sriracha, which is totally optional. you could also add a spicy kick to the actual peanut sauce itself, or just do what i did.
the tofu and mushroom mixture makes for the best leftovers (if you have any)! this recipe is enough for 2-3 people depending on how hungry everyone is.
just double the amount if you’re looking to make a larger batch. the reason i say 2-3 is because it’s just all veggies and tofu aside from the sauce!
idk about you but i’m going to need a solid amount then to feel full!


i have nothing against cooking with oil and do so like at least like every other day BUT there have been some requests for recipes with no added oil.
Vegan Tofu and Mushrooms Lettuce Wraps don’t have any added oil and the veggies + tofu are cooked in vegetable broth!
you absolutely can sauté the mixture first using oil but I would still recommend adding veggie broth so everything cooks down well!

so, aside from the tofu and mushrooms, i added a shredded red and green cabbage mixture with carrots from Trader Joe’s!
it’s 9 ounces and you can find something similar at any grocery store.
if you’re not a fan and just want to use something else, i think kale would be a great option! just make sure you remove the hard stems so the the kale cooks down.

Easy Tofu and Mushroom Lettuce Wraps

Ingredients
14 ounces extra firm tofu cut into cubes (the more solid the better)
8 ounces sliced cremini mushrooms
9 ounce bag of shredded red and green cabbage
1 and 1/4 cup vegetable broth
- peanut sauce
1/4 cup very creamy peanut butter
2 tbsp liquid aminos
1 tbsp ginger juice
4 tbsp vegetable broth or water
1 tsp garlic powder
1 tsp onion powder
1/2 tsp chili powder
sea salt to taste
Directions
- add the veggies and tofu to a large pan along with the vegetable broth. cook on medium-high heat for 8-10 minutes or until the veggies are cooked down and the liquid is absorbed.
- then, whisk the sauce ingredients together and pour over the tofu and veggie mixture.
- serve with large romaine hearts or wraps of your choosing and enjoy!
