Healthy Vegan Cinnamon Swirl Muffins

if i said that i like these muffins, that would be a huge understatement. i absolutely LOVE Healthy Vegan Cinnamon Swirl Muffins. holy deliciousness, they’re out of this world. you will be shocked to know that i only used 3 tbsp of maple syrup, excluding some coconut sugar on top.

whether you have Healthy Vegan Cinnamon Swirl Muffins for breakfast, a snack or dessert, you will 100% feel satisfied. between the cinnamon topping and light + fluffy texture, they are divine.

once again, i used my favorite flour combo of all time, oat flour and almond flour. i’m telling ya, there’s nothing like it! the texture is perfect every single time.

isn’t that cinnamon swirl beautiful?! it’s just cinnamon, coconut sugar, and a little bit of yogurt mixed together in a paste.

you just add a small spoonful to the top of the batter and use a fork or a toothpick to swirl it around. the cinnamon sugar mixture creatures this beautiful semi-crunchy topping that adds a bit of sweetness too.

if you don’t want to use yogurt, you could use melted butter. also, instead of coconut sugar, cane sugar or brown sugar works too, but you will need some sort of granulated sugar!

as you can see from the pictures, i was able to make 7 medium size muffins. to evenly distribute the batter, you can just use 1/4 cup measuring cup and fill the muffin tins to the top.

if you want to make your muffins smaller and add less batter, go for it! just monitor the baking time. maybe instead of 22 minutes they’ll be done at 19.

you can store the muffins in the fridge or freezer because they’re super freezer friendly. after you try them though and see how flippin’ amazing they are, the muffins probably won’t make it past a few days lol

apple sauce is one of the key ingredients in the muffins for both taste and texture. it makes baked goods so light and fluffy!

if you’re not a fan though, you can just replace the 1/4 cup of applesauce with mashed banana. you will also need some dairy free yogurt for this recipe and i recommend something like kite hill coconut yogurt or almond yogurt.

their yogurt is really delicious, pretty affordable and some of the best for baking.

here’s the entire list of everything you need!

  • oat flour

  • almond flour

  • baking powder

  • almond extract

  • vanilla extract

  • almond butter

  • maple syrup

  • applesauce

  • yogurt

  • cinnamon

  • almond milk

  • coconut sugar

if you’re wondering why i used both almond extract and vanilla extract, it’s because the flavor combination produces a delicious cake like flavor.

you can of course just use one or the other instead of both.

all of the ingredients are available at most grocery stores by the way! i do my best not to use many ingredients that are hard to get ahold of!

Ingredients

  • 1 cup oat flour

  • 1 cup almond flour

  • 1/2 tbsp baking powder

  • 1/4 tsp almond extract

  • 1/4 tsp vanilla extract

  • 1/4 cup creamy almond butter

  • 3 tbsp maple syrup

  • 1/4 cup unsweetened applesauce

  • 1/4 cup plain unsweetened dairy free yogurt

  • 1/3 cup almond milk

  • 1 tbsp cinnamon

  • cinnamon swirl
  • 2 tbsp coconut sugar

  • 1/2 tbsp cinnamon

  • 1 tbsp dairy free yogurt

Directions

  • preheat the oven to 350 degrees. mix the muffin ingredients in a bowl in no specific order.
  • combine until a thick batter forms. use a 1/4 cup measuring cup to evenly distribute the batter into muffin cups.
  • then mix the swirl ingredients together until a thin paste forms and add a small spoonful to the top of each muffin. use a fork or a tooth pick to create a superficial swirl on the top.
  • bake at 350 degrees for 22 minutes. cool down completely and enjoy!
