bananas and walnuts are truly one of the greatest combos of all time! there’s something so special and comforting about the duo and these cookies bring all of the cozy vibes. they’re gluten-free too and have no added sugar, sounds amazing, right?!
the bulk of Vegan Banana Walnut Breakfast Cookies comes from the mashed bananas, oats, almond flour and flax meal.
you could totally say these cookies are nutrient dense and packed with the good stuff. they are the ultimate breakfast or snack.
for breakfast, two of the cookies paired with some coffee will keep you full and satisfied.

while i love banana and walnuts, if you’re just not a fan, feel free to swap with another nut or just omit altogether.
raisins would also be a great add in with the oats and give all of the oatmeal raisin cookie vibes.
the cookies are definitely sweet because i used four really ripe bananas. make sure they’re ripe because if not, the texture could be different and the sweetness won’t be there.

as far as the main flour, it’s almond! i have not tried this recipe with anything else, so if you’re going to make a sub, it’s at your own risk.
almond flour is really distinct and by replacing it you will definitely create a different texture.

the process to make the cookies is beyond easy by the way.
you just start with mashing the bananas, add all of the wet ingredients and then the dry ones.
you can mix in the oats and walnuts last if you want! to evenly distribute the cookies and make them a hearty size, i used a 1/4 cup measuring cup.
then, with ever so slightly wet hands, you can press down on the cookie batter and slightly flatten them + evenly out the tops.

Vegan Banana Walnut Breakfast Cookies

Ingredients
4 medium size overripe bananas mashed
1/4 cup almond milk
1/2 tsp cinnamon
1/4 cup flax meal
1 and 1/3 cup almond flour
1/2 tbsp baking powder
1/2 cup chopped walnuts
2/3 cup old fashion oats
- you can mix vegan cream cheese and sunbutter for the topping in my reel
Directions
- preheat the oven to 350 degrees.
- mash the bananas and mix in the almond milk. can mash in the food processor by pulsing until they’re a chunkier texture. then add in the dry ingredients, combine and lastly fold in the walnuts and oats.
- use 1/4 cup measuring cup to evenly distribute the batter and slightly flatten into cookies.
- bake at 350 degrees for 23 minutes and enjoy!
