when i preview a recipe on IG, people ask for the recipe every time and even more people than usual asked for this one. yes, it tastes as good as it looks and then some. the texture is indeed incredible and it’s hard to believe this is also gluten free, amazing!
confession, cornbread is not exactly my favorite but it’s absolutely grown on me as i made this recipe several times trying to perfect it.
the flavors are simple and allow the true taste and nature of the cornmeal to shine through, ya know, what it should be all about.

i barely edit my photos, so that color is as real as it gets. the yellow is so gorgeous and vibrant, i can’t get over it!
my cornbread was baked in a bread loaf pan and there’s no add ins here.
it’s back to complete basics! if you wanted, some vegan pepperjack cheese could be an amazing add in.
disclaimer though, i have not tried that myself but dang, it sounds good. ah, some miyoko’s pepper jack for the perfect spicy kick, yum.

in terms of subs for this recipe, i don’t recommend you do any because vegan baking let alone gluten free baking has to be so precise.
for the cornmeal, I used Arrowhead Mills Organic Gluten free Yellow Corn Meal!
it’s incredibly fine and that’s important, because you don’t want to use a coarser ground or the recipe won’t turn out the same.
another important component, yeast! you need to use yeast in this recipe and i used Fleischmann’s Rapid Rise Yeast.

here’s everything you need to make Healthy Vegan and Gluten Free Cornbread:
- unsweetened plain almond milk or any dairy free
- extra virgin olive oil
- maple syrup
- rapid rise yeast
- gluten free all purpose flour (used Trader Joe’s)
- organic gluten free yellow cornmeal (used fine and see above text for brand)
instead of adding sea salt to the actual bread batter, i sprinkled a little on top and added some vegan butter when the bread was done baking.
it really was heavenly. this bread would be phenomenal with jam by the way, especially if you can find a good once with some spiciness.

Healthy Vegan and Gluten Free Cornbread

1 and 1/4 cup unsweetened plain almond milk
1/4 cup extra virgin olive oil
1/4 cup maple syrup
1 packet rapid rise yeast
1/3 cup gluten free all purpose flour
1 and 1/2 cups organic gluten free yellow cornmeal
Directions
- preheat the oven to 350 degrees and add the yeast to a large mixing bowl.
- warm up the almond milk and then mix in the extra virgin olive oil and maple syrup.
- pour over the yeast, mix well and let is set 3 minutes. then, add in the flour and cornmeal and mix well.
- cover the bowl with a towel and let it rest about 20-30 minutes.
- add to a bread loaf pan and bake for 40 minutes at 350 degrees, cool down and then enjoy!
