first came The Best Vegan Cinnamon Rolls and now, we have The Best Vegan Cinnamon Roll Bread, so life doesn’t get much better. this loaf is truly a work of art and a hybrid of my cinnamon rolls and the Panera cinnamon crunch bagels. with a deliciously crunchy top and soft bread, this is a total dream.
oh gosh, cinnamon crunch anything and i am so in. so here’s the scoop, you’re going to need yeast for this recipe and that’s the key to the texture.
i placed The Best Vegan Cinnamon Roll Bread in the fridge overnight and baked it in the morning. you don’t have to wait as long, but the bread should rest in the fridge a few hours for sure.

the recipe is a take on The Best Vegan Cinnamon Rolls except instead of all purpose flour, i used oat flour.
you wonβt miss the eggs & you wonβt miss the dairy in most breadβ¦this loaf truly takes it home and has it going on.
another fabulous element of the bread? there are ZERO funky ingredients in The Best Vegan Cinnamon Roll Bread and as always, minimal ingredients are needed.

i mean, this bread is good enough that you donβt even need a glaze or frosting if you so choose. while i think they kind of sort of totally go together, the bread is simply perfect as is.
as far as the frosting, i went with vanilla frosting and it is indeed store bought. my fave go to brand is simple mills vanilla.
you could also melt some coconut butter if you want a glaze that doesn’t have any added sugar.
the prep process is really easy too!
all you have to do is warm up the almond milk and then add the remaining wet ingredients and whisk them together.
then, add the rapid rise yeast, mix well and let it set for a couple of minutes. after that, you can add the flour mix the batter with a whisk.
the texture of this bread will be nothing like the cinnamon rolls. the batter will be pretty liquidy actually!
then on top, i drizzled a cinnamon glaze that creates a bit of a crunch! it’s just maple syrup and cinnamon mixed together :).

The Best Vegan Cinnamon Roll Bread

3 cups oat flour
1 packet rapid rise yeast
2 tbsp extra virgin olive oil
1/2 cup maple syrup
1 cup almond milk (i used sweetened)
- cinnamon swirl
1 tsp cinnamon
2.5 tbsp maple syrup
- vanilla frosting see text for brand
Directions
- preheat the oven to 350 degrees.
- heat the almond milk in the microwave for 1 minute. then, add the maple syrup and olive oil and whisk together.
- transfer mixture to a large mixing bowl and sprinkle on yeast and mix well. let it sit for a couple of minutes.
- add the flour and whisk well until a smooth batter forms. pour into a lightly greased bread loaf pan.
- mix the cinnamon swirl ingredients together and pour on the top of the bread. swirl with a knife.
- bake at 350 degrees for 30-32 minutes (tooth pick or knife should come out clean). cool down a bit and top with the glaze. enjoy!
