Two-Layer Vegan Cookie Dough Fudge is made with all gluten-free, dairy-free and vegan-friendly ingredients! you only need minimal ingredients too!

yay, they’re here!! Two-Layer Vegan Cookie Dough Fudge Bars. not one, but TWO layers of absolute bliss. the first layer is a slightly baked cookie dough layer with all of the yummy peanut butter.

the second layer is a delicious chocolate fudge that’s made with dairy free chocolate chips and coconut oil. my recipe is fail proof because all you have to do is warm it up in the microwave for one minute total.

these perfect lil squares of goodness will brighten your day and they’re the best the have on hand in the freezer. for a little extra something, i added some chopped sunflower seed butter cups to the top. you can keep it plain or really add anything that you want to!

extra chocolate chips, toasted coconut, banana slices, nut or seed butter, you name it!

so the first layer is this fabulous cookie dough cake basically that’s been baked to perfection. it still feels and tastes like cookie dough and then the chocolate fudge layer on top compliments it perfectly.

this fudge is the perfect recipe to make for sweet snacking and it’s always on hand in some form. when the sweet tooth hits, grabbing a square from the freezer is so convenient. it’s made with real ingredients that are surely better for you, yet Two-Layer Vegan Cookie Dough Fudge is soooo flippin’ rich.

what ingredients you need to make this vegan and healthier two-layer fudge recipe: 

  • almond flour

  • peanut butter

  • maple syrup

  • almond milk

  • chocolate chips

  • coconut oil

  • peanut butter or sunflower seed butter cups

without the topping, 6 ingredients sounds easy enough, right?! you can whip this up in no time too. i actually made the cookie dough fudge last night and placed it in the freezer! this morning, i left it out to thaw a bit before i took the pictures and it was just perfect.

after it thaws a bit, i cut the fudge into squares and then it’s ready for freezer or fridge storage. just make sure you either let it thaw or warm up before you eat because the layers will be super hard.

Two-Layer Vegan Cookie Dough Fudge

Ingredients

  • 2 cups almond flour

  • 1/3 cup creamy and runny peanut butter

  • 3 tbsp maple syrup

  • 1/2 cup unsweetened vanilla almond milk

  • fudge
  • 1 cup chocolate chips

  • 2 tbsp coconut oil

  • peanut butter cups or chocolate chips for topping

Directions

  • mix the base layer ingredients in a large bowl until a thick batter forms. add to a bread loaf pan and bake at 350 degrees for 18 minutes.
  • warm up the fudge ingredients in a microwave for 1 min total but 30 seconds at a time and mix until silky smooth.
  • pour on top of the base layer and place in the freezer for 45 minutes.
  • take out and place toppings on top if you want and put back in the freezer for 6 hours. cut into squares, store in the freezer or fridge in an airtight container and enjoy!
