is there anything better than cookie dough? i think not! my recipe for Easy and Healthy Vegan Cookie Dough is a piece of cake, the recipe is beyond easy!
this is enough for about 3 servings i would say, but two if you’re really hungry! i’ll be splitting this with my man after dinner and i honestly would love to just skip the dinner part haha.
what makes this cookie dough recipe extra special? it’s sweetened with dates! you make it in the food processor and I have a video below showing you the process.
with minimal, easy and real ingredients, you probably have everything on hand, at least if you’re a fan of dates! here’s what you’re going to need!
- oat flour
- almond flour
- almond extract
- peanut butter or any nut butter
- almond milk
- chocolate chips- i used Endangered Species Oat Milk ones!
even though Healthy and Easy Vegan Cookie Dough is healthy, sweetened with dates, egg-free, and dairy-free, it still tastes just as rich + decadent as the real thing!
let’s be real, cookies are freakin’ awesome but likeeeee…..we’re here for the cookie dough. i think the combo of oat flour and almond flour is perfect and creates the best texture ever!
when it comes to these two flours, i used them because i think they are easy to digest. the combo creates a true dough texture too! you could use all almond flour but you would have to modify ingredient amounts because the texture is different from oat.
how do you make Easy and Healthy Cookie Dough?
1. blend the ingredients – add all the cookie dough ingredients but the chocolate chips to a food processor and blend on high. then, add the dough to a bowl.
2. fold in the chocolate chips – mix well until everything is well combined.
3. finish – grab a spoon and enjoy! store in the fridge in an airtight container and enjoy!
what can you add in- chocolate chips are the absolute best! raisins would be amazing too. perhaps some coconut shreds or sprinkles? yum!! honestly, your options are endless and you can get creative.

Easy and Healthy Vegan Cookie DoughCourse: Desserts, Snacks, Sweet
1/4 cup oat flour
1/4 cup almond flour
1/4 cup unsweetened almond milk
4 large pitted medjool dates
1/4 tsp almond extract
1/4 cup runny peanut butter or nut butter
1/4 cup chocolate chips
- add everything but the chocolate chips to a food processor and blend until a thick dough forms.
- add to a bowl and mix in the chocolate chips.
- store in an airtight container and enjoy!
Hi! How much almond flour would you use as a substitute for oat flour?
hey!! i’m not sure since i only made it this way but i recommend starting with 1/2 cup and adding more little by little until it gets to the right cookie dough consistency 🙂
