hey hey hey! happy saturday! it’s a great weekend to Build Your Own Nourish Bowl! the best pre super bowl meal if you ask me. wash it down with one of my desserts and you have the best meal ever.
so many seem to love when i post my healthy, nourishing, and plant based food bowls. it is wonderful to eat the most vibrant abundance of vegan food while savoring every bite of delicious flavors.
while this bowl is incredibly healthy, it lacks no flavor thanks to the natural flavors of the foods, but mainly, THIS SAWCE!

ok, so here’s the scoop, everything in this bowl except the broccoli (well and rice) was roasted in the oven.
i have to admit, i don’t care for roasted broccoli and much prefer steamed. if you want to omit broccoli altogether or roast yours, go for it!
to make things easy, you can just roast everything together on a baking tray or two, whatever works. my bowls are sometimes super jam-packed but this one is a bit more minimalistic.
that’s the great thing about a Build Your Own Nourish Bowl, anything goes! you can add more or less, whatever your heart desires.

easy veggie bowl recipes are great for lunch, dinner and meal prep! you could just double my recipe if you want to. my original recipe will yield about 3 meals for you.
it’s a grounding meal and easy to appreciate the simplicity of this nutrient dense nourish bowl!

everything i used my my nourish bowl!
- sweet potato
- zucchini
- broccoli
- tofu
- jasmine rice
- the best sawceeee ever!
the sauce is flippin’ amazing, and it’s the easiest to put together. it’s actually a nourishing almond butter based sauce. with simple, earthy flavors, it’s just almond butter, vegetable stock, mustard, sriracha, garlic and coconut aminos.

Build Your Own Nourish Bowl

minutesIngredients
4 cups sweet potato cubes
4 cups zucchini cut into quarters
14 oz extra firm tofu cut into cubes
2 tbsp avocado oil
1 tbsp sesame seasoning for the tofu
- steamed broccoli
4 cups broccoli florets
water for steaming
1.5 cups jasmine rice- used Trader Joe’s premade frozen
- sauce
1/4 cup runny almond butter
1/3 cup vegetable broth
1 tsp very finely minced garlic
1 tbsp coconut aminos
1/2 tsp sriracha
1/2 tbsp dijon mustard
Directions
- for the broccoli, place 1/3 inch of water in a saucepan and bring to a boil. add theΒ broccoli and steam 5 with the lid on.
- the broccoli is done when you can pierce it with a fork but i like mine slightly crunchy still.
- for the rest of the veggies and tofu, coat with avocado oil and the tofu with sesame seasoning if desired and bake at 400 degrees for 30 minutes.
- warm up the rice and then whisk all the sauce ingredients together until a smooth sauce forms. serve warm and enjoy!
